Ladies Finger / Okra Mandi


  Ladies finger /  Okra  Mandi:
Ingredients:
·        Lady’s finger / okra – 250 g
·        Onion shallots – 10 chopped
·        Garlic – 7 sliced
·        Green chilli – 6 chopped
·        Tamarind paste – ¼ spn
·        Rice flour – 3 spn
·        Water – 2 cup
·        Salt as needed

For seasoning:
·        Oil – 2 spn
·        Mustard seeds – ½ spn
·        Urad dal – ½ spn

Preparation :
·        Wash and chop the ladies finger into small sized pieces.
·        Mix rice flour in ½ cup of water and make a fine paste without any lumps.
·        Mix tamarind paste in ½ cup of water and extract the juice.

Method :
·        Heat oil in a pan, add the seasoning one by one.
·        Then add the chopped onion and sauté till they turn pink.
·        Then add the sliced garlic and chopped chillis and sauté for few secs.
·        Then add the chopped okra and sauté for 5 mins.
·        Next add tamarind juice and salt and covered cook till  raw smell goes off.
·        Then add the rice flour water and one cup of water and cook till the mandi becomes little thickens. Done!
                                        

Okra mandi is ready.. serve hot with steamed rice .. J
  

Hot Onion Sambal



   Hot Onion Sambal  :

Ingredients :
·        Onion – 1 big
·        Green chilli – 1 chopped
·        Pepper powder – 1 spn
·        Curd – 1 spn
·        Salt as needed
·        Coriander leaves – 1 spn chopped

Preparation :
·        Peel ,wash and cut the onions into lengthwise thinly.

Method :
·        In a bowl , mix all the ingredients and toss well. Check the salt. Done !
                         

Hot onion sambal is ready.. J

Okra / Ladies Finger Raita


  Okra / Ladies finger Raita :

Ingredients :
·        Tender Ladies finger –150 gms
·        Green chilli – 1 chopped
·        Salt as needed
·        Yogurt – ½ cup

For seasoning :
·        Oil – ½ spn
·        Mustard seeds – ½ spn
·        Urad dal – ½ spn
·        Curry leaves - few

Preparation :
·        Wash and dry the ladies finger. Discard the crown and tip part ,then cut the middle portion into thin slices.

Method :
·        Heat oil in a pan, shallow fry the okra pieces along with green chili till they turns brown and crisp.
·        Let it allow to cool.
·        Then add yogurt and enough salt to the fried okra.
·        To make seasoning: heat oil in a pan, add the seasoning one by one.let the contents cool down.
·        Then transfer it to the raita.. mix well.  Done!
                              

Okra raita is ready.. serve with rice.. :J

Masala Peanuts / Peanuts Pakoda


  Masala Peanuts / Peanuts  Pakoda

Ingredients:
·        Roasted peanuts – 100 g
·        Gram flour – 3 spn
·        Rice flour – 1 ½ spn
·        Chilli powder – ½ spn
·        Salt as needed
·        Crushed garlic – 3 (optional)
·        Water – little
·        Oil for deep frying

Method:
·        Take peanuts in a bowl , add gram flour, rice flour, salt, chilli powder and mix well.
·        Now sprinkle little water and rub them with your fingers. This will make the flours to stick to the peanuts. once  they are coated, set aside for 15 mins.
·        Heat oil in a pan, sprinkle the flour coated peanuts in hot oil and fry till they turn light golden brown colour.
·        Drain the excess oil in paper towel.. Done!
                                   

Masala peanuts are ready.. serve with hot coffee or tea.  J 

Spicy Masala Omelette



  Spicy Masala Omelette:

Ingredients :
·        Egg - 1
·        Turmeric powder –  a pinch
·        Salt as needed
·        Oil as needed

To make masala  paste:
·        Onion shallots – 7 nos
·        Cumin seeds – ¼ spn
·        Dry red chilli – 1-2 big

Preparation :
·        In a blender, grind the onion, cumin seeds and red chilli and make a fine paste.

Method :
·        Beaten the egg in a bowl. Add all the ingredients like masala paste,turmeric  powder,pepper powder and salt. Toss well.
·        Heat the dosa tawa , drizzle oil in a pan. Once hot , reduce flame , add the egg mixture and swirl it around the pan.
·        Cook till the  bottom of the omelette becomes slightly brown, slowly flip over and cook the other side for few secs. Done!
                                

Slide the spicy masala omelette  onto a plate.. serve hot with bread or steamed rice.. J

Tapioca Masala



  Tapioca Masala:
                                       
Ingredients :
·        Tapioca / Maravalli Kilangu  - ½ piece (peel,boil, cut into cubes)
·        Onion – 2 finely chopped
·        Tomato – 1 chopped
·        Sambar powder – 1 spn
·        Turmeric powder – ¼ spn
·        Grated coconut – 2 spn (optional)
·        Salt as needed

For seasoning :
·        Oil – 2 spn
·        Mustard seeds – 1 spn
·        Channa dal – 2 spn
·        Curry leaves – few

Preparation :
·        Peel the skin, boil the maravalli kilangu by adding little water. Allow it to cool and cut into small sized cubes.

Method :
·        Heat oil in a pan, add mustard seeds when it splutters, add channa dal sauté till it becomes golden brown. Then add curry leaves.
·        Next add chopped onions and sauté till turn pink.
·        Then add tomatoes and fry till it turn mushy.
·        Then add turmeric powder, sambar powder, salt along with little water and sauté till raw smell goes off.
·        Then add grated coconut (if using) and mix well. Cover it and cook for few mins.
·        Atlast add the chopped tapioca pieces and toss well til the masala coated on all pieces. Cook it for 3 – 4 mins . Done!
                                    

Tapioca masala is ready.. serve with steamed rice.. J

Cabbage Omelette


   Cabbage Omelette:
                     
Ingredients :
·        Egg - 1
·        Cabbage – ¼ cup finely chopped
·        Onion – ¼ cup finely chopped
·        Turmeric powder –  a pinch
·        Chilli powder – ½ spn
·        Garam masala – ½ spn
·        Pepper powder – ¼ spn
·        Salt as needed
·        Oil as needed

Preparation :
·        Wash the cabbage and chop them finely.
·        Heat  half spoon of oil in a pan , sauté well the chopped cabbage by adding little salt. Allow it to cool.

Method :
·        Beaten the egg in a bowl. Mix all the ingredients like sauted cabbage,onion, salt , turmeric powder and spicy powders. Toss well.
·        Heat the dosa tawa , drizzle oil in a pan. Once hot , reduce flame , add the egg mixture and swirl it around the pan.
·        Cook till the  bottom of the omelette becomes slightly brown, slowly flip over and cook the other side for few secs. Done!
                                

Slide the yummy cabbage omelette  onto a plate.. serve hot with bread or steamed rice.. J
