Hot Red chilli -Onion Chutney for Idly , Dosa And Oothapam



    Hot  Red chilli – Onion  Chutney  For Idly ,Dosa :

Ingredients :

·        Small onion – 13
·        Red chilli –  10
·        Salt as needed
·        Garlic – 1
·        Curry leaves few

To temper :
·        Oil – 1 spn
·        Mustard seeds – 1 spn
·        Urad dal – ½ spn



Method :
·        Peel the onions and garlic . cut into small pieces.
·        In a mixie, add all the ingredients like onion- garlic ,red chilli  and grind it to a coarse paste with enough salt .(don’t add more water just sprinkle water or 2 spoons)
·        Heat oil in a pan ,and add the tempering items and Pour  the chutney over it .
·        Stir it for a minute and transfer it to the serving bowl. Done !
                                         
Red chilli – Onion chutney is ready.. serve with idly or dosa J

Gobi / Cauliflower Kurma for Chapathy , Naan and Roti



    Gobi / Cauliflower Kurma For Chapathy, Naan and Roti  :
         
Ingredients :
·        Cauliflower florets – 2 cups
·        Onion – 2 big chopped
·        Tomato – 2 big chopped
·        Ginger garlic paste – 2 spn
·        Turmeric powder – ¼ spn
·        Chillli powder – 2 ½ spn
·        Coriander powder – 5 spn
·        Garam masala – 1 spn
·        Salt as needed
·        Coriander leaves for garnish


To  make a paste:
·        Grated coconut – ¼ cup
·        Cashews – 8 to 10 (soak in hot water for 10 mins)


For seasoning:
·        Ghee / butter – 2 spn
·        Cinnamon – 2 bits
·        Clove – 2
·        Cumin seeds – ¼ spn
·        Cardamom - 1

Preparation :
·        Cut and wash the cauliflower florets. Put it in a rolling hot water along with little salt and turmeric powder for 10 to 15 mins.
·        After that.. drain the water completely and keep the florets aside.

Method :
·        Heat ghee / butter in a pan, add the seasoning one by one.
·        Then add chopped  onions  and sauté  till turn golden brown.
·        Then add ginger garlic paste and sauté for few secs..
·        Then add the chopped tomatoes and sauté well till they turn mushy.
·        Then add all the spicy powders and sauté for few mins.
·        Allow it to cool. Next add little water and grind along with cashews and coconut to a fine paste.
·        Then pour the paste in a pan , Cover and cook it till raw smell goes off.  mins. Add salt.
·        Then add the cauliflower florets and cook it till florets are soften.( 15 to 20 mins)
·        Garnish with coriander leaves. Done!
                         

Gobi kurma  is ready .serve hot with chapathy J

Peanut Chutney ( with coconut ) for Idly , Dosai and Oothapam



   Peanut   Chutney  (with coconut )  For Idly ,Dosa and oothapam:

Ingredients :

·        Raw peanuts – 1 ½ cup
·        Grated coconut – ½ cup
·        Green chilli / red chilli – 7 to 10
·        Salt as needed
·        Tamarind – a little

To temper :
·        Oil – 1 spn
·        Mustard seeds – 1 spn
·        Urad dal – ½ spn
·        Curry leaves few


Method :
·        Heat  a pan, and dry roast the peanuts for few mins. Then remove the skin.
·        In a mixie, grind the chillies, salt, tamarind first and grind it to  finely.
·        Then add coconut , peanuts  and grind it to a fine smooth paste  by adding  enough salt and water . Transfer it to serving dish.(add water if u need)
·        Heat oil in a pan ,and add the tempering items.
·        Pour it over the chutney .Done !

Peanut chutney  is ready.. serve with idly or dosa or oothapam J

Small Onion Chutney for Dosai and Oothapam



        Small Onion  Chutney  For  Dosa and oothapam:

Ingredients :

·        Small onions – 2 cups
·        Red chilli –  12 to 14 ( but I used green chilli – 8)
·        Salt as needed
·        Tamarind paste – ¼ spn
·        Grated coconut – 1 cup
·        Coriander chopped – 1 spn


To temper :
·        Oil – 1 spn
·        Mustard seeds – 1 spn
·        Urad dal – ½ spn



Method :
·        Heat  the pan, dry roast the red chili (if used) for few mins.keep it aside.
·        Then add grated coconut and roast it till they turn slight brown. keep it aside.
·        Then heat oil in a pan , add chopped onions , sauté  till they turn light golden brown..
·        Switch off the flame and let it allow to cool.
·        In a mixie, grind the chillies, salt, tamarind, coconut  first and grind it to  finely.
·        Then add onion  mixture and grind it to a coarse with enough salt . Transfer it to serving dish.(add water if u need)
·        Heat oil in a pan ,and add the tempering items.
·        Pour it over the chutney .Done !

Gobi 65 / Cauliflower 65




     Gobi 65 / Cauliflower 65:

Ingredients :
·        Cauliflower florets – 1 cup(cut into small pieces)
·        Corn flour -  5 spn
·        Rice flour – 3 spn
·        Red chilli powder – ¾ to 1 spn
·        Garam masala – ¼ spn
·        Ginger garlic paste – 1 spn
·        Salt as needed
·        Water and thick curd  – little
·        Oil for deep fry

Preparation :
·        Cut , wash and put the cauliflower florets in hot rolling boiling water along with little salt and turmeric powder for 5 mins.
·        After that, drain the water completely. Dry the cauliflower florets in a tissue paper
.
Method :
·        In a bowl ,mix well the corn flour, rice flour, chilli powder, garam masala ,ginger garlic paste , salt and thick curd and cauliflower florets.
·        Marinate the florets and set aside for 20 – 30 mins.
·        Heat oil for deep frying. Take the  mix and drop them breaking into small florets.
·        Fry until golden brown, stirring in between.
·        Remove it from the oil and drain the excess oil by using colander or paper towel.. done !
                          

Yummy  Gobi 65  is ready.. serve hot with a cup of coffee or tea J

Healthy Oats Biriyani



     Healthy Oats  Biriyani:



Ingredients :
·        Oats – 1 cup
·        Rice – ¼ cup
·        Water – 1 ½  cup
·        Onion – 1 chopped
·        Ginger – 1 inch
·        Garlic – 5 nos
·        Green chilli – 2 chopped
·        Carrot , beans, potato – 1 ½ cup (cut into small pieces)
·        Peas – ¼ cup(optional)
·        Cauliflower florets – 1 cup (optional)
·        Turmeric powder – ¼ spn
·        Garam masala – ½ spn
·        Salt as needed
·        Coriander leaves  for garnishing

For seasoning :
·        Ghee / oil – 2 pn
·        Mustard seeds – ½ spn
·        Urad dal – 1 spn
·        Channa dal – 1 spn

Preparation :
·        Wash and soak the rice in water for 30 mins .
·        Wash ,peel and cut the veggies
·        Grind green chilli , ginger and garlic and make a paste.

Method :
·        In a heavy bottomed pan,  add ghee then add the seasoning  one by one.
·        Then add onions, ginger garlic chilli paste and  sauté well for few mins..
·        Then add the veggies one by one and cook well .
·        Next add garam masala  and  mix well.
·        Next add the soaked rice with 1  ½ cups of water and  add  the salt.
·        Cover and cook till the rice and veg  are cooked well.
·        If required add water.
·        Then add oats and cook along with the rice and veggies.
·        Cover and cook it till oats are cooked.
·        Remove  from the vessel garnish with coriander leaves. Done !.


                                         


Yummy and healthy Oats  Biriyani is ready.. serve hot . J
