Soya Chunks Biriyani






   


Soya Chunks  Biriyani:

It is a delicious, tasty and yummy rice easily made by using pressure cooker.

Ingredients :
·        Rice – 1 cup
·        Water – 1 ½  cup
·        Curd – ½ cup
·        Onion – 2 chopped
·        Tomato – 1 ½ finely  chopped
·        Soya chunks – 1 ½ cups
·        Carrot , beans, potato – 1 ½ cup (cut into small pieces)
·        Peas – ¼ cup
·        Turmeric powder – ¼ spn
·        Garam masala – ½ spn
·        Salt as needed
·        Mint leaves – ½ cup
·        Coriander leaves – ½ cup

To make a paste :
·        Green chilli – 2
·        Ginger – 1 inch
·        Garlic – 5 cloves


For seasoning :
·        Ghee / oil – 3 + 3 spn
·        Cinnamon – 2 bits
·        Star anise – 2
·        Bay leaf – 1

Preparation :
·        Wash and soak the rice in water for 30 mins .
·        Wash ,peel and cut the veggies.
·        Boil 3 cups of water in a vessel. Add little salt. When its rolling boiling add soya chunks and switch of the flame. After 15mins, take and drain the water.
·        Wash the soya chunks  3-4 times in a normal tap water. Drain the water completely.

Method :
·        In a pressure cooker, add ghee then add the cinnamon, bay leaf ,star anise one by one.
·        Then add onions, ginger garlic  green chilli paste and  sauté well for few mins.
·        Then add chopped tomatoes and sauté well till turn mushy.
·        Then add the veggies and soya chunks one by one and sauté well for 5 mins.
·        Next add garam masala , turmeric powder and curd . mix well.
·        Next add  1 ½  cup of water, and salt. Allow it to boil.
·        Add mint leaves and coriander leaves.
·        Next add the soaked rice(discard the water) and mix well. Check the salt.
·        Then again add coriander leaves and mint leaves on the top of the rice . add few more dropes of ghee.
·        Cover the lid of the cooker.
·        Pressure cook it for 2 whistles. Switch off the flame.
·        Once the pressure released, fluff the rice with fork. Done !
                                        



Yummy and soya chunks  Biriyani is ready.. serve hot with Dalcha or Raita of your choice. J

Pasta with Fried Brinjals



   

Pasta with Fried brinjals:

Ingredients :
·        Pasta –   1 cup (water – 2 to 3 cups)
·        Onion – 1  finely chopped
·        Brinjal – 1 cut lengthwise  
·        Red chilli powder/ sambar  powder – 1 to 1 ¼  spn
·        Salt as needed
·        Tomato sauce – 2 spn
·        Coriander leaves for garnishing

For seasoning :
·        Oil – 2 spn
·        Mustard seeds – ½ spn
·        Curry leaves few

Preparation :
·        Wash and slice the brinjal lengthwise. Just sprinkle little salt on it and fry in oil to a light golden colour.
·        Boil  2 to 3 cups of water in a pan , add salt and 1 spn of oil , add the pasta and cook for 8 to 10  mins.
·        Each pasta takes different amount of  time to cook. check the package instructions.
·        After the pasta cooks, drain all the water.
·        Add some cold water, rinse and drain the cold water also. keep it aside.

Method :
·        Heat oil in a pan, add seasoning one after another.
·        Then add  onions  and sauté for few mins.
·        Then add spicy powder,  and salt (if required sprinkle little water) and stir for 3 min till the raw smell goes off.
·        Add the tomato sauce , fried brinjals and cooked pasta and mix well to coat the masala all over the pasta.
·        Cook it for 5 more mins,. Toss well and remove from heat.
·        Garnish with coriander leaves.
                               

 Pasta with fried brinjals  are  ready.. serve hot J
