Spicy Dal Gravy For Chapathy



             Spicy Dal Gravy For Chapathy:
Dal gravy is a delicious Indian lentil recipe. This dal is seasoned with variety of spices and it tastes yummy.
Ingredients:
§  Tur dal- 1 cup
§   Salt as needed
§  Turmeric powder – ¼ spn
Seasoning  :
§  Oil /ghee – 2 spn
§  Tomato – 2 finely chopped
§  Mustard seeds – ¼ spn
§  Asafoetida - pinch
§   Red chili- 4 chopped
§  Green chilli – 4 chopped
§  Ginger  paste – 2 spn
§  Chilli powder – ½ spn
§  Garam masala – 1 spn
§  Sugar- 1 spn
§  Channa  masala powder – ½ spn
Preparation :
1.     Wash and soak  dal with 3 cups of water, for at least one hours.
2.     Pressure cook the sal with salt and turmeric powder for 3 whistles.
3.     Dal  should be soft.
4.     When pressure cools down, take the dal out.
Method :
1.     Heat oil /ghee in a pan. Then  add  mustard seeds, asafoetida, red chili, green chili, ginger and chili powder one after the another. Stir for a few seconds.
2.     Add tomatoes,chili powder, salt and sugar stir and cook until tomatoes are tender and mushy.
3.     Add channa powder, and garam masala cook for about one minute.
4.     Pour the seasoning over  dal mix it well and cook for another minute.
5.     Dal gravy is ready, serve hot with chapathy . J

Steamed Rice Dumplings



       Steamed Rice Dumplings :
          Steamed Rice Dumplings are traditional South Indian snack. They called it as Neer Urundai. Steamed Rice Dumplings are very easy to prepare and delicious.
                                       


                                        

Ingredients :
·        Par boiled rice (puzhungal arisi) – 1 cup
·        Grated coconut – ¼ cup
·        Salt as needed

For tempering :
·        Oil – 2 spn
·        Mustard seeds – 1 spn
·        Urad dal – 1 spn
·        Split Bengal gram – 1 spn
·        Red or green chili – 2 chopped
·        Curry leaves – few

Preparation :
·        Soak rice in water for 3 hours and grind along with salt and grated coconut into a coarse batter.

Method :
·        Heat oil in a pan,add mustard seeds and wait for spluttering.
·        Then add urad dal ,split Bengal gram one after another and sauté till it turns golden brown.
·        Add chili and curry leaves and sauté few seconds.
·        Add the coarse batter into it mix well ,put the flame to low and keep strirring.
·        Let it cook for 5 mins.
·        Remove from flame ,let it cool for few mins.
·        When it is cool to touch,grease your hands  and pinch equal portions of the cooked mixture and roll into equal  balls.
·        Place them on a steamer or idly cooker and steam it for 10  mins..Done !

Steamed rice Dumplings are ready.. 
serve hot with any chutney of your choice. Jbut I likes to eat with Idly podi,its really yummy.. J J 

Fiber Rich - Steamed Oats Balls



       Fiber  Rich – Steamed Oats Balls :
          We know that ,steamed foods are very healthy.Oats are rich in a specific fiber called Beta-glucan. Steamed oats  balls are very easy  to prepare,tasty and healthy snack.

Preparation time : 10 mins
Cooking time : 20 mins

Ingredients :
·        Oats – 1 cup
·        Water – 3/4 cup
·        Salt as needed

For tempering :
·        Oil – 2 spn
·        Mustard seeds – 1 spn
·        Urad dal – 1 spn
·        Split Bengal gram – 1 spn
·        Red or green chili – 2 chopped
·        Curry leaves – few

Preparation :
·        In a pan dry roast the oats for 2-3 mins till its aroma comes .

Method :
·        Heat oil in a pan,add mustard seeds and wait for spluttering.
·        Then add urad dal ,split Bengal gram one after another and sauté till it turns golden brown.
·        Add chili and curry leaves and sauté few seconds.
·        Then add  ½ cup of water with salt needed ,boil  it for 5  mins.
·        Add the oats into the boiling mixture,put the flame to low and keep strirring.
·        Oats get cooked and becomes sticky rather than brittle.
·        Remove from flame ,let it cool for few mins.
·        When it is cool to touch,grease your hands  and pinch equal portions of the cooked mixture and roll into equal  balls.
·        Place then on a steamer or idly cooker and steam it for 10  mins..Done !
                                        

                                         


                             


Steamed oats balls are ready..serve hot with chutney . J Jyou can also add coconut or onion or any veg of your choice to make the balls more tasty and colourful. J

Black Night Shade Leaves Soup



      Black Night Shade Leaves Soup:
          Black Night shade means in tamil Manathakkali keerai. This soup is a light runny gravy with keerai and coconut milk, goes well with steamed rice. It can be given to both adults and children. Manathakkali leaves are the great home remedy for mouth ulcer. 
                     


Preparation time : 10 mins
Cooking time : 30 mins
Serves : 3

Ingredients :
·        Rice rinsed water(kayani thani) – 2 cups
·        Blacknight shade leaves – 1 cup tightly packed
·        Small onion – 8 to 10
·        Salt as needed
·        Oil – 1 spn

For grinding :
·        Coconut – ½ cup
·        Cumin seeds – 1 spn
·        Pepper – 1 spn  or pepper powder – 1 spn

Preparation :
·        Soak the raw rice with 2 cups of water for 15 mins,rinse the raw water and collect  the water in a bowl.
·         Grind  coconut along with cumin seeds and  pepper  into a fine paste with ¼ cup of water .keep it aside.
·        Discard the stem and take out the leaves  from keerai.
Method :
·        Heat  the oil in the pan and sauté small onions for few mins.
·        Then add rice rinsed water ,spinach and salt and cover it cook for 15 mins till the bitterness of the leaves goes off.
·        Atlast add the grinded paste ,let it cook for 5 mins.check the salt.
·        Switch off the flame..Done!



Creamy soup is ready..serve with hot rice.. J

Spicy Carrot Roast



    Spicy Carrot Roast :
          We usually prepared poriyal with carrots. But I have tried carrot roast. This is easy to prepare and serve the purpose of the spicy-sweet sidedish.
                     


  Preparation time : 5 mins
Cooking time : 15 mins
Serves : 3

Ingredients :
·        Carrot – 1
·        Sambar powder or chili powder – 2 spn
·        Salt as needed
·        Curry leaves – few

For tempering :
·        Oil  - 2 to 3 spn
·        Mustard seeds – ¼ spn

Preparation :
·        Wash and peel the skin of the carrot.
·        Cut the carrots into uniform sized pieces of your desired shapes.( I have cut carrot into thin semicircle shapes)

Method :
·        Heat oil in a pan.crackle the mustard seeds first.
·        The add curry leaves and sauté for few seconds.
·        Add the carrot pieces,spice powder ,salt and stir well.
·        Sprinkle little water for the spice powder to coat well with the carrots and give a quick stir.
·        Keep cooking  by cover with lid till it roast well.
·        Keep on turnings  at intervals to ensure even roasting of the carrots.
·        Switch off the flame..Done!
                              



Serve it as a sidedish with any rice of your choice. My family members love to have this with hot rasam rice ..Try it and enjoy the taste.. J
