Spicy Carrot Roast :
We usually prepared
poriyal with carrots. But I have tried carrot roast. This is easy to prepare
and serve the purpose of the spicy-sweet sidedish.
Preparation time : 5 mins
Cooking time : 15 mins
Serves : 3
Ingredients :
·
Carrot – 1
·
Sambar powder or chili powder – 2 spn
·
Salt as needed
·
Curry leaves – few
For tempering :
·
Oil - 2 to 3 spn
·
Mustard seeds – ¼ spn
Preparation :
·
Wash and peel the skin of the carrot.
·
Cut the carrots into uniform sized pieces of your desired shapes.( I
have cut carrot into thin semicircle shapes)
Method :
·
Heat oil in a pan.crackle the mustard seeds first.
·
The add curry leaves and sauté for few seconds.
·
Add the carrot pieces,spice powder ,salt and stir well.
·
Sprinkle little water for the spice powder to coat well with the
carrots and give a quick stir.
·
Keep cooking by cover with
lid till it roast well.
·
Keep on turnings at intervals
to ensure even roasting of the carrots.
Serve it as a sidedish with any rice of your choice. J My family members love to have this with hot rasam rice ..Try it and
enjoy the taste.. J
