Spicy Coconut Thuvaiyal



 Spicy Coconut Thuvaiyal :

          It goes well with curd rice or with hot steamed rice topped with a spn of ghee J

Ingredients :
·        Grated Coconut – ¾ cup
·        Red chilli – 6
·        Salt as needed
·        Tamarind paste – ¼ spn(optional)

For seasoning :
·        Asafoetida – ½ spn
·        Urad dal – ½ to ¾ spn
·        Oil – 1 spn

Method :
·        Heat oil in a pan, add asafetida, then add urad dal sauté till the dal turns golden brown.
·        Transfer it to the blender then add chilli, tamarind paste ,salt and grind it to a fine powder.
·        Next add coconut with little water ,grind it and make a coarse paste.
·        Do not add too much water. It should be thick. Done!
·        Transfer it to a serving bowl ..

Golden Onion pakora (pakoda)

Golden Onion Pakora (pakoda):

Ingredients :
·        Onion – 2 medium cut lengthwise
·        Gram flour / kadalai mavu – 1 cup
·        Rice flour – ¼ cup(adjust for your need)
·        Red chilli powder – ¾ to 1 spn
·        Salt as needed
·        Crushed garlic – 2 (optional) I am not used
·        Water – little
·        Oil for deep fry

Method :
·       In a bowl ,mix well the onions with salt with your hand. Set aside for few mins. It leaves some water.
·        Then add chilli powder, gram flour and rice flour mix well. Just sprinkle little water.( do not add more water)
·        Mix well everything and make a thick crumbly dough.
·    Heat oil for deep frying. Take the pakoda mix and drop them breaking into pieces. Do not ball them or shape it. It should be shapeless.
·        Fry until golden brown, stirring in between.
·      Remove it from the oil and drain the excess oil by using colander or paper towel.. done !



Golden onion pakoda is ready.. serve hot with a cup of tea or coffee.. J

Potato - Peas Kurma For Chapathy, Coconut Milk Rice and Steamed Rice


  Potato – Peas kurma For Chapathy , coconut milk rice and steamed rice :
         
Ingredients :
·        Peas – 1 cup
·        Potato – 2 small (boil, peel and mash)
·        Onion – 2 medium chopped
·        Tomato – 1 chopped
·        Ginger garlic paste – 1 spn
·        Garlic – 5 sliced
·        Salt as needed
·        Coriander leaves for garnish

To  make a paste:
·        Green chilli – 6
·        Grated coconut – ½ cup
·        Sombu / fennel seeds – ½ spn
·        Khus khus powder – 1 spn

For seasoning:
·        Oil – 1 spn
·        Cinnamon – 2 bits
·        Bay leaf - 1


Preparation :
·        Pressure Cook  the Peas  with little salt till becomes soft.
·        Grind green chilli along with other ingredients in a blender with little water and make a fine paste.
·        Boil, peel and mash the potato.

Method :
·        Heat oil in a pan, add the seasoning one by one.
·        Then add the onions, garlics and sauté till turn golden brown.
·        Next add ginger garlic paste and fry it for few mins.
·        Then add the chopped tomatoes and sauté well till they turn mushy.
·        Then add the grounded paste, salt with enough water. Cover and cook it for 15 mins.
·        Then add the cooked peas and mashed potato . Cover and cook it for 5 to 7 mins. Garnish with coriander leaves. Done!
                            


Peas potato kurma  is ready .serve hot with chapathy or coconut rice or steamed rice.. J

Channa / chick peas Masala



        Channa Masala:

          This masala  goes well with rasam rice, sambar and curd rice.

Ingredients :
·        Channa / chick peas / konda kadalai – 1 cup
·        Sambar powder – 1 ½ spn
·        Garam masala – ½ spn (optional)
·        Salt as needed

To  make a  masala paste:
·        Onion – 2 medium chopped
·        Tomato – 1 chopped
·        Grated coconut – ¼ cup

For seasoning:
·        Oil – 1 spn
·        Mustard seeds – ½ spn
·        Curry leaves


Preparation :
·        Soak channa in water for 12 hrs, pressure cook till it becomes soft.
·        In a blender, grind all the masala ingredients with little water and make the fine paste.

Method :
·        Heat oil in a pan, add mustard seeds when it splutters, then add curry leaves and saute till it crisp.
·        Then add the masala paste ,sauté well till raw smell goes off.
·        Next add sambar powder, salt and enough water. Cook it for 5 mins.
·        Then add the cooked channa , mix it well.
·        Cover and cook it  till the masala thickens . Done!
Garnish with coriander leaves.
                    

Channa Masala  is ready .serve hot with steamed rice.. J

Coconut Milk Rice



      Coconut Milk Rice:

It is a delicious, tasty and yummy rice easily made by using pressure cooker.

Ingredients :
·        Rice – 1 cup
·        Coconut milk (thick) - 2 cups
·        Onion shallots – 12 - 15
·        Garlic  – 10 nos
·        Salt as needed


For seasoning :
·        Ghee /oil – 2 spn
·        Cinnamon – 2 bits
·        Star anise - 1
·        Bay leaf - 1

Preparation :
·        Wash and soak the rice water for 30 mins.


Method :
·        In a pressure cooker, add oil /ghee then add the seasoning one by one.
·        Next add onions and garlics and sauté till it turns golden brown.
·        Then add coconut milk with salt required and allow it to boil.
·        Next add the  soaked rice. Discard  the water.
·        Cover the lid of the cooker.
·        Pressure cook it for 2 whistles. Switch off the flame.
·        Once the pressure released, Fluff the rice with fork .. Done!
                              


Yummy coconut milk rice is ready.. serve hot with potato gravy or peas potato kurma.. J
