Oats Halwa



   Oats  Halwa:

Ingredients :
·        Oats – 1 cup
·        Water –  ½ cup
·        Milk – ½ cup
·        Sugar – ½  cup
·        Ghee – 4  spn
·        Cashew – 10
·        Almonds – 4 sliced
·        Raisins – 5
·        Cardamom powder – a pinch

Preparation :
·        Powder the oats in mixie. Then heat a spn of  ghee in a pan  and roast  the oats  flour till slight change in colour.
·        Then heat  ghee in a pan and roast the cashews and raisins . keep it aside.

Method :
·        In a heavy bottomed pan, add the  milk and water.
·        Allow it to boil and dissolve the sugar in water. When its starts  to boil add  cashews, sliced almonds, raisins , cardamom powder and oats flour.
·        Stir it continuously making sure no lumps are formed.
·        Add ghee and stir well till you get a halwa consistency( that is , it leaves from the sides of the pan ). Done !




Oats  Halwa is ready.. serve to the nears and dears J

Simple and Yummy Onion Chalna for Chapathy



    Simple  and yummy  Onion Chalna For Chapathy  :
         
Ingredients :
·        Onion – 2 big chopped
·        Tomato – 1 chopped
·        Ginger garlic paste – 2 spn
·        Green chilli – 4
·        Garam masala – 1 spn
·        Chilli powder – 2 spn
·        Coriander powder – 4 spn
·        Turmeric powder – ¼ spn
·        Salt as needed
·        Coriander leaves and mint leaves – 4 spns chopped

To  make a paste:
·        Grated coconut – ¼  cup
·        Sombu – ½ spn
·        Cashews – 20 nos

For seasoning:
·        Oil – 1 spn
·        Cinnamon – 1 bit

Preparation :
·        Wash and cut the onion and tomato.
·        Soak the cashews in hot water for 15 mins.
·        Grind grated coconut with other ingredients in a blender with little water and make a fine paste.


Method :
·        Heat oil in a pan, add the cinnamon .
·        Then add chopped  onions , ginger garlic paste and green chilli and sauté for few mins.
·        Then add the chopped tomatoes and sauté well till they turn mushy.
·        Next add the coriander and mint leaves. Add salt .
·         Cover and cook  for 5 mins
·        Then add spicy powders, turmeric powder along with enough water.
·        Cover and cook it for 10 mins or till raw smell goes off.
·        Atlast add the coconut cashew paste and cook it for 10 mins. Done !
·         Garnish with coriander leaves. Done!
                           

Onion chalna  is ready .serve hot with chapathy J

Yummy Dalcha for Veg Biriyani by using Pressure Cooker



   Dalcha for Veg Biriyani by using Pressure Cooker  :
         
Ingredients :
·        Tur dal / Thuvaram parupu – ½ cup
·        Channa dal / Kadalai paruppu – 4 spn
·        Onion – 1 big
·        Tomato – 1
·        Ginger garlic paste – 1 spn
·        Turmeric powder – ¼ spn
·        Green chilli – 4
·        Potato , carrot ,  chow chow , raw manga – 3 cups (cut into small pieces)
·        Brinjal – 2 small cut lengthwisw
·        Sambar powder – 1 ½  spn
·        Tamarind paste – 1 spn
·        Salt as needed
·        Coriander leaves for garnish


For seasoning:
·        Oil / ghee – 2  spn
·        Curry leaves – few
·        Cinnamon – 2 bits
·        Star anise – 2
·        Cloves – 2
·        Bay leaf - 1

Preparation :
·        Soak the dals together in water for 30 to 45 mins.


Method :
·        Heat oil in a pressure cooker, add the seasoning then add  curry leaves and sauté till it turn crispy.
·        Then add chopped chili and ginger garlic paste sauté for few secs.
·        Then add chopped onions and sauté till turn pink.
·        Then add the chopped tomatoes and sauté well till they turn mushy
·        Next add the soaked dal and all the veggies , turmeric powder and sambar powder.
·        Allow it to boil.
·        Next add the tamarind juice ,mix it well. If required add water.
·        Check the salt.
·         Cover the lid of the pressure cooker and cook it for 2 whistles. switch off the flame.
·        After the pressure realeses completely, Garnish with coriander leaves. Done!
    

Yummy Dalcha  is ready .serve hot with Biriyani J

Fried Eggs



     Fried  Egg :

 It  has been serve as a evening snack .Try it and enjoy the taste J

Ingredients :

·        Boiled eggs – 2
·        Rice flour  or Maida as needed
·        Onion – 1 big  finely chopped
·        Coriander leaves – 2 spn finely chopped
·        Salt as needed
·        Oil for deep fry

To make masala :
·        Grated coconut – ½ cup
·        Pottu kadalai /  roasted gram – 1 spn
·        Kasa kasa powder – ½ spn
·        Green chilli – 2
·        Garlic – 2
·        Ginger – ½ inch
·        Salt as needed

Preparation :

·        Boil the eggs with a pinch of salt. Discard the outer shell and cut the boiled eggs into two halves  in lengthwise
·        Grind all the ingredients and make a fine masala paste.
·        In a bowl, add masala paste then add coriander leaves, onion and the flour you used.Mix well.check the salt.
·        Then take the half portion of egg and coat well the masala on it.
·        Fully covered the egg with the masala.
·        Heat oil in a pan, drop the eggs  gently and fry both sides until dark brown.
·        Place it on a paper towel to drain the excess oil.
·        Repeat the same process for the rest of the eggs . Done!
                                          

Yummy  fried Eggs  are  ready.. serve hot with a cup of tea or coffee J

Peanut Chutney (without coconut ) for Idly , Dosai and Oothapam



     Peanut Chutney (without coconut)  For Idly ,Dosa and oothapam:

Ingredients :

·        Roasted peanuts – 1 ½ cup
·        Garlic – 2 small
·        Red chilli –  5 to 7
·        Tamarind – little
·        Salt as needed


To temper :
·        Oil – 1 spn
·        Mustard seeds – 1 spn
·        Urad dal – ½ spn
·        Curry leaves few


Method :

·        In a mixie, grind the chillies, salt,garlics, tamarind first and grind it to  finely.
·        Then add roasted peanuts grind it to a fine paste by adding water and salt.  Transfer it to serving dish.
·        Heat oil in a pan ,and add the tempering items.
·        Pour it over the chutney .Done !
