Chicken Stir Fry




  Chicken  Stir Fry:

Ingredients :
·        Chicken – 200 gms (washed and cut into pieces)
·        Onion – 1 big chopped
·        Tomato – 1 finely chopped
·        Ginger  – 1 spn chopped
·        Green chilli – 3 chopped
·        Turmeric powder – ¼ spn
·        Chilli powder – 2 spn
·        Garam masala – ½ spn
·        Pepper powder  - ½ spn
·        Salt as needed
·        Yogurt – 3 spn
·        Coriander leaves for garnish


For seasoning :
·        Oil – 3 spn
·        Cinnamon – 2 bit
·        Star anise - 1
·        Curry leaves few

Preparation :
·        Wash and cut chicken into pieces.

Method :
·        Heat oil in a pan, add the seasoning one after the another.
·        Then add the chopped onions and sauté till turn brown.
·        Then add tomatoes, ginger ,green chilli and sauté for few mins.
·        Then add the chicken pieces and sauté till its colour change to white.
·        Then add the turmeric powder ,chilli powder, garam masala ,pepper powder, salt and stir it continuously .(Don’t add water, if its getting burnt just sprinkle little water)
·        Cook it for 15 min with constant stirring.
·        Atlast add the yogurt and stir it for 2 – 3  mins. Done!
·        Garnish with coriander leaves.
                        

Chicken Stir Fry is ready.. serve with steamed rice   J



                                  

Fried Brinjal Masala



   Fried Brinjal Masala:
          This masala  goes well with rasam rice, sambar and curd rice.


Ingredients :
·        Aubergine / violet colour brinjal – 3 medium (cut lengthwise)
·        Ginger garlic paste – 2 spn
·        Turmeric powder – a pinch
·        Tamarind juice – 2 spn
·        Jaggery – 1 spn
·        Salt as needed
·        Oil for fry

To  make a  masala paste:
·        Roasted peanuts – 1 spn
·        Coriander seeds – 1 spn (dry roast)
·        Cumin seeds – ½ spn
·        Dry red chilli – 8
·        Grated coconut – 2 spn
·        Garlic – 2 cloves


For seasoning:
·        Oil – 1 spn
·        Mustard seeds – ½ spn
·        Curry leaves


Preparation :
·        Wash and cut brinjals lengthwise.
·        Dry them in a paper towel or cloth for few mins.
·        Then heat oil in a pan, fry the brinjals till  they turn golden colour. Keep it aside.
·        In a blender, grind all the masala ingredients with little water and make the fine paste.

Method :
·        Heat oil in a pan, add mustard seeds when it splutters, then add curry leaves and saute till it crisp.
·        Then add the ginger garlic paste and the masala paste ,sauté well till raw smell goes off.
·        Next add tamarind juice, jaggery , salt and ½ cup of water. Cook it for 5 mins.
·        Then add the fried brinjals. Mix it well till the masala coats well on the fried brinjals.
·        Cover and cook it till the masala thickens . Done!
                             


Fried Brinjal  Masala is ready .serve hot with steamed rice.. J

Spicy Egg Scramble



 Spicy Egg Scramble :

          It goes well with sidedish for rice and also with bread.

Ingredients :
·        Egg – 2
·        Onion – 1 big finely chopped
·        Garlic  cloves – 5 finely chopped
·        Pepper powder – ½ spn
·        Garam masala – ½ spn
·        Red chilli powder – ½ to 1 spn
·        Turmeric powder – a pinch
·        Salt as needed
·        Oil – 1 spn
·        Coriander leaves – 1 spn chopped

Preparation :
·        Crack and pour the eggs in a bowl. Add little salt. Beaten the eggs well. keep it aside.

Method :
·        Heat oil in pan, add chopped garlics and sauté till they turn golden colour.
·        Then add chopped onions and sauté till turns  brown colour.
·        Then add turmeric powder , spicy powders and salt along with little water and fry till raw smell goes off.
·        Pour the beaten eggs and leave undisturbed for few secs.
·        When the eggs starts to solidify, scramble well the egg mixture with the ladle or spoon and cook for few mins.  Done !
                            
Garnish with coriander leaves..spicy Egg Scramble is ready,.. Serve hot J








Pepper Chicken



   Pepper  Chicken:

Ingredients :
·        Chicken – 200 gms (washed and cut into pieces)
·        Onion – 1 big chopped
·        Tomato – 1 finely chopped
·        Ginger garlic paste – 2 spn
·        Turmeric powder – ¼ spn
·        Chilli powder – 2 spn
·        Garam masala – ½ spn
·        Pepper powder  - 2 to 3 spn
·        Salt as needed
·        Coriander leaves for garnish

To make a paste:

·        Onion – ½ piece
·        Grated coconut – ½ spn

For seasoning :
·        Oil – 2 spn
·        Mustard seeds – ½ spn
     cinnamon - 2 bits
      star anise - 1
·        Curry leaves few

Preparation :
·        Wash and cut chicken into pieces.

Method :
·        Heat oil in a pan, add the mustard seeds and the other seasoning one by one.
·        Then add the chopped onions and sauté till turn brown.
·        Then add tomatoes, ginger garlic paste and sauté for few mins.
·        Then add the chicken pieces and sauté till its colour change to white.
·        Next add turmeric powder and salt, cook for 5 mins.
·        Then add the coconut paste ,chilli powder, garam masala along with enough water. Check the salt.
·        Cover it and cook for 20  mins.
·        Atlast add the Pepper powder and cook it for 2 – 3  mins. Done!
·        Garnish with coriander leaves.
                                    
Pepper chicken is ready.. serve with steamed rice   J

Ragi ( Finger Millet) Halwa


   Ragi (Finger Millet) Halwa:

Ingredients :
·   Ragi flour – 1 cup
·   Natural unrefined cane sugar(nattu sakkarai) – 1 ½ cup
·   Water – 2 cups
·   Milk powder – 3 spn
·   Cardamom powder – ½ spn
·   Roasted Cashews – 4
·   Salt a pinch
·   Ghee – 4 spn

Preparation :
·   Melt the cane sugar in 2 cups of water. Filter it to remove impurities.

Method :
·   Dry roast the ragi flour till it raw smell goes off.
·   Then mix the cane sugar syrup, pinch of salt, cardamom powder ,milk powder and stir the mixture continuously making sure that no lumps are formed.
·   Add ghee and stir well till you get a thick pulp.
·   Garnish with roasted cashews. Done!
