Fried Brinjal Masala:
This
masala goes well with rasam rice, sambar
and curd rice.
Ingredients :
·
Aubergine / violet colour brinjal – 3
medium (cut lengthwise)
·
Ginger garlic paste – 2 spn
·
Turmeric powder – a pinch
·
Tamarind juice – 2 spn
·
Jaggery – 1 spn
·
Salt as needed
·
Oil for fry
To make a
masala paste:
·
Roasted peanuts – 1 spn
·
Coriander seeds – 1 spn (dry roast)
·
Cumin seeds – ½ spn
·
Dry red chilli – 8
·
Grated coconut – 2 spn
·
Garlic – 2 cloves
For seasoning:
·
Oil – 1 spn
·
Mustard seeds – ½ spn
·
Curry leaves
Preparation :
·
Wash and cut brinjals lengthwise.
·
Dry them in a paper towel or cloth for
few mins.
·
Then heat oil in a pan, fry the
brinjals till they turn golden colour.
Keep it aside.
·
In a blender, grind all the masala
ingredients with little water and make the fine paste.
Method :
·
Heat oil in a pan, add mustard seeds
when it splutters, then add curry leaves and saute till it crisp.
·
Then add the ginger garlic paste and
the masala paste ,sauté well till raw smell goes off.
·
Next add tamarind juice, jaggery , salt
and ½ cup of water. Cook it for 5 mins.
·
Then add the fried brinjals. Mix it
well till the masala coats well on the fried brinjals.
·
Cover and cook it till the masala
thickens . Done!
Fried Brinjal Masala
is ready .serve hot with steamed rice.. J
