Curd Egg Scramble Kurma For Chapathy



 Curd Egg Scramble kurma for chapathy:

          This  dish goes well with Chapathy, Roti and Naan.

Ingredients :
·        Eggs – 2
·        Potato – 1 small (boil, peel and mash)(optional)
·        Onion – 2 medium finely chopped
·        Tomato – 1  finely chopped
·        Green chilli – 3 chopped
·        Yogurt – ½ cup
·        Turmeric powder – ¼ spn
·        Red chilli  powder – 1 spn
·        Coriander powder – 2 spn
·        Salt as needed
·        Coriander leaves for garnish

To  make a paste:
·        Grated coconut – ½ cup
·        Cashew – 2 (optional)

For seasoning:
·        Oil / ghee – 3 spn


Preparation :
·        Crack and pour the eggs in a bowl. Add little salt. Beaten the eggs well.
·        Heat oil in a pan, pour the beaten eggs and leave undisturbed for few secs.
·        When the eggs starts to solidify, scramble the egg mixture with the ladle or spoon. Keep it aside.
·        Grind coconut along with cashew to a fine paste and keep it aside.

Method :
·        Heat oil/ ghee in a pan, then add the chopped onions and sauté till turn pink.
·        Then add the  green chilli , tomatoes sauté till they turn mushy.
·        Next add turmeric powder , salt and spicy powders and curd(yogurt).
·        Then add coconut  paste, salt and covered cook for 15 mins..( add enough water).
·        Then add the scrambled eggs and mashed potato and mix well. Cook till the scrambled eggs gets cooked with the kurma.( 8 – 10 mins) Done!

Mochai Kurma / Vall Whole Bean Kurma For chapathy



 Mochai kurma  / Vall Whole Bean Kurma  for Chapathy:

          This  dish goes well with Rice and chapathy.

Ingredients :
·        Mochai / vall bean – 2 cup
·        Potato – 1 small (boil, peel and mash)(optional)
·        Onion – 2 medium chopped
·        Tomato – 1 chopped
·        Green chilli – 5 chopped
·        Ginger garlic paste – 1 spn
·        Turmeric powder – ¼ spn
·        Garam masala – ½ spn
·        Sambar powder – 1 spn
·        Salt as needed
·        Coriander leaves for garnish

To  make a paste:
·        Grated coconut – ½ cup
·        Sombu – 1 spn
·        Kasa kasa – ¼ spn
·        Onion – ¼ piece
·        Garlic cloves - 3

For seasoning:
·        Oil – 3 spn
·        Cinnamon – 2 bits
·        Star anise – 1
·        Bay leaf – 1 no
·        Curry leaves


Preparation :
·        Soak the mochai in water over night  and Pressure cook  with little salt until it becomes soft.
·        Grind coconut, sambu ,kasa kasa in a blender and make a fine paste atlast add the garlic and onion and grind it coarsely.

Method :
·        Heat oil in a pan, add the seasoning one after the another.
·        Then add the chopped onions and sauté till turn pink.
·        Then add the ginger garlic paste, green chilli , tomatoes sauté for few mins.
·        Then add coconut  paste, salt, turmeric powder, spicy powders and covered cook for 20 mins..( add enough water).
·        Then add the cooked mochai and mashed potato and mix well.
·         Cover it and cook it for 5 mins. Done!
                              

Mochai Kurma is ready.. Garnish with coriander leaves..serve hot with chapathy.. J









Ragi Coconut Ladoo



 Ragi Coconut Ladoo:


          It is a delicious and tasty ladoo.

Ingredients :
·        Ragi  flour– ¾ cup
·        Coconut – ½   cup
·        Nattu sakkarai (natural unrefined cane sugar)– ¼ - ½  cup
·        Warm milk to make ladoos
·        Cardamom powder – a pinch

Preparation :
·        Dry roast the ragi flour till raw smell goes off..
·        Dry roast the coconut till they turm slightly brown and water free.
·        Powdered the nattu sakkarai in a blender.

Method :
·        In a bowl, mix together the roasted coconut ,roasted ragi flour, powdered cane sugar  and cardamom powder.
·        Boil milk  in a pan and add to the mixture little at a time. Grease your hands with ghee if required and make laddos from this mixture.(make sure that the milk is warm) . Done!
                                  

Tasty Ragi coconut ladoo is ready.. J

Okra curd Curry / Ladies Finger Mor Kulambu


  Okra Curd Curry /  Ladies finger  mor kulambu :


Ingredients:
·        Lady’s finger / okra – 4 or 5 pieces
·        Onion – ½ cup chopped
·        Turmeric powder – ¼ spn
·        Yogurt – 1 ½ cup
·        Salt as needed

For seasoning:
·        Oil – 2 spn
·        Mustard seeds – ½ spn
·        Urad dal – ½ spn
·        Asafoetida – 1 pinch
·        Curry leaves

To make paste:
·        Fenugreek – ½ spn
·        Channa dal – 1 spn
·        Tur dal  - 2 spn       ( dry roast these three ingredients and make a paste along with the following two  ingredients )
·        Grated coconut – 3 spn
·        Green chilli – 3

Preparation :
·        Wash and chop the ladies finger into small sized pieces.

Method :
·        Heat oil in a pan, add the seasoning one by one.
·        Then add the chopped onion and sauté till they turn pink.
·        Then add the chopped okra and sauté for 5 mins.
·        Next add ground paste, turmeric powder , salt and buttermilk (yogurt).
·        Cover and cook  it for 15  to 20 mins till the curry becomes little thickens. Done!
                               

Okra curd curry is ready.. serve hot with steamed rice .. J
