Sweet Cookies



      Sweet Cookies:
          These cookies are very fast and easy to make .

Ingredients :
·        Wheat flour – 1 ½ cup
·        Rava /sooji – ¼ cup
·        Ghee – ¼ - ½ cup
·        Natural unrefined cane sugar(nattu sakkarai) – ¼ - ½ cup
·        Water – ¼ cup

·        Oil  for deep fry

Preparation :
·        Powdered the nattu sakkarai and add ¼ cup of water and melt it in a low flame.
·        Filter it to remove impurities.
·        Boil the sweet syrup till you get a soft ball consistency. Allow it to cool.

Method :
·        In a bowl, add wheat flour ,rava, ghee and sweet syrup and mix well everything with your fingers and make a smooth dough.(if required add more ghee)
·        Then take small portion from the dough and flatten it slightly with your palms and form a circle shape.
·        Heat oil in a pan, drop the circle shaped dough gently and fry both sides until golden brown.
·        Place it on a paper towel to drain excess oil.
·        Repeat the same process for the rest of the dough. Done!

Tapioca / Maravalli Kilangu Sweet Balls


 Tapioca / Maravalli Kilangu  Sweet Balls :
                                                    

Ingredients :
·        Maravalli kilangu /Tapioca- ½ piece (peel, boiled and mash)
·        Nattu sakkarai(natural unrefined cane sugar) – 5  tp 6 spn
·        Grated coconut – 5 spn
·        Cardamom powder – ½ pinch
Preparation :
·        Boil the tapioca in a pan , by adding enough salt. Allow it to cool and mash it well.
Method :
·        In a bowl, add mashed tapioca, nattu sakkarai, grated coconut and cardamom powder.
·        Mix well everything with your hand and make it like a dough.
·        Divide the dough into equal balls.
                              

Sweets balls are ready.. serve and enjoy ..  J

Crispy Egg pakora / Pakoda




 Crispy Egg Pakora  / Pakoda:


Ingredients :
·        Egg – 1
·        Onion – 1 sliced lengthwise
·        Green chilli – 2 chopped
·        Red chilli powder – ½ spn
·        Pepper powder – ½ spn
·        Turmeric powder – a pinch
·        Coriander leaves – 2 spn finely chopped
·        Salt as needed
·        Gram flour – 1 cup(adjust for your need)
·        Rice flour – ¼ cup
·        Oil for deep fry

Preparation :
·        Beaten the egg in a bowl.
·        Then mix the sliced onions, chilli, coriander leaves, salt ,  spicy powder and turmeric powder  and mix well with your hands.
·        Next add gram flour and rice flour and mix well till it gets a thick crumbly dough.
·        Pakoda / pakora mix is ready.
·        Heat oil in a pan , take the pakora mix and drop them breaking into  small pieces.
·        Fry until golden brown, stirring in between. Remove it from the oil and drain the excess oil by using colander or paper towel. Done!
                                 

Crispy Egg Pakora is ready..Serve hot .. J

Aval - Peanut Ladoo




   Aval - Peanut  Ladoo with Sugar:

          It is a delicious and tasty ladoo.

Ingredients :
·        Aval – 1 cup
·        sugar– ¼  cup
·        Roasted peanuts – ¼ cup
·        Ghee  as needed
·        Cashew nuts – 5 quatered
·        Raisins – 5
·        Cardamom powder – a pinch

Preparation :
·        Dry roast the aval lightly and grind them in a blender.
·        Heat ghee in a pan and roast the cashews till golden brown  and also the raisins until it puff up.
·        Powdered the sugar and roasted peanuts separately in a blender.

Method :
·        In a bowl, mix together the powdered aval , powdered sugar,powdered peanuts , roasted cashews ,raisins and cardamom powder.
·        Melt  needed ghee in a pan and add to the mixture little at a time. Grease your hands with ghee if required and make laddos from this mixture.(make sure that the ghee is warm) . Done!

Spicy Egg Adai



   Spicy Egg Adai:


Ingredients :
·        Egg – 2
·        Onion –  2 finely chopped
·        Green chilli – 5 finely chopped
·        Red chilli powder – ½ spn
·        Pepper powder – ½ spn
·        Garam masala – ¼ spn(optional)
·        Turmeric powder – a pinch
·        Gram flour – 1 – 1 ¼  cup
·        Rice flour – ¼  cup
·        Curry leaves – few
·        Coriander leaves – 2 spn chopped
·        Salt as needed
·        Oil for making adai.

Method :
·        Beaten the eggs in a bowl.
·        Then mix all the ingredients and toss well .It should be in adai batter consistency. Check the salt.(if its watery adjust it by adding gram flour )
·        Heat dosa tawa ,  pour the ladle of adai batter in the center of  a pan and swirl around the back of the ladle to form  concentric circle like a uttapam.
·        Drizzle few drops of oil around the edges and few drops over the adai.
·        When the bottom is cooked, flip over and cook it for few mins.. Done!
                               

Spicy Egg Adai is ready.. serve hot

Poha / Aval Upuma




    Poha /  Aval Upuma:

Ingredients :
·        Poha / Aval – 1 cup
·        Onion – 1 finely chopped
·        Green chilli – 1 finely chopped
·        Grated ginger – 1 spn
·        Roasted peanuts – 2 spn
·        Turmeric powder – 1 pinch
·        Salt as needed
·        Coriander leaves for garnishing
·        Lemon juice – 1 spn

For seasoning:
·        Oil – 2 spn
·        Mustard seeds – ½ spn
·        Urad dal – ½ spn
·        Channa dal – ½ spn
·        Curry leaves – few
·        Green chilli – 1 chopped

Preparation :
·        Wash aval in water to remove impurities for 2 times. Drain the water completely.
·        Take the aval in a bowl, add a pinch of turmeric powder and salt. Mix well. Keep it aside for 10  mins.

Method :
·        Heat oil in a  pan, add mustard seeds , when it splutters add urad dal, channa dal,green chilli and curry leaves.
·        Then add chopped onions,ginger and green chilli and sauté for few mins.
·        Then add soaked aval, roasted peanuts and mix well. cook for 2 mins.
·        Squeeze a few drops of lemon juice and mix well.
·        Garnish with coriander leaves.. Done!
                         


Aval upuma is ready.. serve hot . J

Green Peas Curry For Idly and Chapathy




  Green Peas Curry For Idly and Chapathy:

          This is a Konkani style dish goes well with idly and chapathy. It’s a very spicy and hot dish.

Ingredients :
·        Green peas – 2 cup
·        Potato – 1 small (boil, peel and mash)(optional)
·        Onion – 2 medium chopped
·        Tamarind paste – ½ spn
·        Turmeric powder – ¼ spn
·        Salt as needed
·        Coriander leaves for garnish

To  make a paste:
·        Green chilli – 10 to 13nos(fry in oil)
·        Fenugreek seeds – ½ spn(fry in oil)
·        Grated coconut – ½ cup
·        Wheat flour – 1 ½ spn

For seasoning:
·        Oil – 3 spn
·        Curry leaves


Preparation :
·        Pressure cook the green peas until it becomes soft.
·        Heat oil in a pan, fry green chilli and fenugreek separately and grind along with coconut and wheat flour. Make it a fine paste by adding little water.
·        Mix the tamarind paste in 1 cup of water and extract the tamarind juice.

Method :
·        Heat oil in a pan, add the curry leaves and sauté till it becomes crisp.
·        Then add the chopped onions and sauté till turn pink.
·    Then add the tamarind juice and coconut chilli paste, salt, turmeric powder and covered cook for 20 mins..(if required add water).
·        Then add the cooked green peas and mashed potato and mix well.
·         Cover it and cook it for 5 mins. Done!
                        


Green peas curry is ready... Garnish with coriander leaves..serve hot with idly or chapathy.. J
