Fried Eggs



     Fried  Egg :

 It  has been serve as a evening snack .Try it and enjoy the taste J

Ingredients :

·        Boiled eggs – 2
·        Rice flour  or Maida as needed
·        Onion – 1 big  finely chopped
·        Coriander leaves – 2 spn finely chopped
·        Salt as needed
·        Oil for deep fry

To make masala :
·        Grated coconut – ½ cup
·        Pottu kadalai /  roasted gram – 1 spn
·        Kasa kasa powder – ½ spn
·        Green chilli – 2
·        Garlic – 2
·        Ginger – ½ inch
·        Salt as needed

Preparation :

·        Boil the eggs with a pinch of salt. Discard the outer shell and cut the boiled eggs into two halves  in lengthwise
·        Grind all the ingredients and make a fine masala paste.
·        In a bowl, add masala paste then add coriander leaves, onion and the flour you used.Mix well.check the salt.
·        Then take the half portion of egg and coat well the masala on it.
·        Fully covered the egg with the masala.
·        Heat oil in a pan, drop the eggs  gently and fry both sides until dark brown.
·        Place it on a paper towel to drain the excess oil.
·        Repeat the same process for the rest of the eggs . Done!
                                          

Yummy  fried Eggs  are  ready.. serve hot with a cup of tea or coffee J

Egg Pulav




       Egg pulav:

It is a delicious, tasty and yummy pulav easily made by using pressure cooker.

Ingredients :
·        Rice – 1 cup
·        Boiled eggs – 3(boil and cut into pieces)
·        Water – ½  cup
·        Coconut milk - 2
·        Onion – 2 chopped
·        Green chilli – 5 chopped
·        Carrot , beans, potato – 1 ½ cup (cut into small pieces)
·        Peas – ¼ cup
·        Capsicum – 1 cup (optional)
·        Turmeric powder – ¼ spn
·        Salt as needed
·        Coriander leaves  for garnish
·        Roasted cashews – 5 for garnish

For seasoning :
·        Ghee / oil – 3  spn + 2 spn
·        Cinnamon – 2 bits
·        Star anise – 2
·        Bay leaf – 1

Preparation :
·        Wash and soak the rice in water for 30 mins .
·        Wash ,peel and cut the veggies.
·        Boil the eggs with little salt. Then allow it to cool. After that peel the skin and cut into pieces of your desired shapes.

Method :
·        In a pressure cooker, add ghee then add the cinnamon, bay leaf ,star anise one by one.
·        Then add onions,  green chilli , and  sauté well for few mins.
·        Then add the veggies one by one and sauté well for 5 mins.
·        Next add  turmeric powder and mix well.
·        Next add  coconut milk , water, and salt. Allow it to boil.
·        Next add the soaked rice(discard the water) and mix well. Check the salt.
·        Then again add coriander leaves  on the top of the rice . add few more dropes of ghee.
·        Cover the lid of the cooker.
·        Pressure cook it for 2 whistles. Switch off the flame.
·        Once the pressure released, fluff the rice with fork. Then add the small pieces of eggs and roasted cashews. Done !
                                   


Yummy and colourful  Egg pulav  is ready.. serve hot J

Egg Fried Rice



     Egg  Fried rice:
          kids love this very much.. Try it and enjoy J

Ingredients :
·        Cooked Rice – ½   cup
·        Egg - 2
·        Onion – 1 big finely chopped
·        Carrot ,beans ,potato  – 1 ½ cup (cut into small pieces)
·        Cabbage – ½ cup finely chopped
·        Capsicum – ½ cup chopped (optional)
·        Pepper powder – 1 spn
·        Turmeric powder – ¼ spn
·        Tomato sauce – 2 spn
·        Chilli sauce – 1 spn
·        Sugar – ½ spn for taste
·        Salt as needed
·        Coriander leaves for garnishing
·        Ghee – 2 spn

Preparation :
·        Pressure cook the rice with little sall and spread it on a plate to cool.
·        Beat the eggs in a bowl. Add little salt ,turmeric powder and pepper. Mix well.
·        Heat oil in a pan, Then add beaten eggs. When it starts to solidify , cut the eggs with ladle and make a egg scramble.


Method :
·        Heat  ghee in a pan, then  add chopped onion,green chilli and sauté well .
·        Then add all the veggies one by one and cook it with little salt.
·        Cover and cook till the veggies becomes soften.
·        Next add the pepper powder ,turmeric powder , tomato sauce, chili sauce.
·        Check the salt.
·        Stir continuously without getting burnt at the bottom. Cook it for 5 mins.
·        Then add the egg scramble and mix well.
·        Transfer cool rice to the pan and mix well.  Garnish with coriander leaves Done !
                                



Delicious Egg fried Rice is ready.. serve hot with any sauce of your choice .. J

Capsicum Omelette



Capsicum  Omelette:

Ingredients :
·        Egg – 1
·        Capsicum – ½ piece finely chopped
·        Onion – ½ cup finely chopped
·        Pepper powder – ½ spn
·        Turmeric powder –  a pinch
·        Salt as needed
·        Oil as needed

Preparation :
·        Wash  and chop the half capsicum  finely.
·        Heat half spoon of oil in a pan, sauté well the chopped capsicum by adding little salt .let it be cool.

Method :
·        Beaten the egg in a bowl. Add all the ingredients like sauted  capsicum , onion , turmeric  powder, pepper powder and salt. Toss well.
·        Heat the dosa tawa , drizzle oil in a pan. Once  hot , reduce flame , add the egg mixture and swirl it around the pan.
·        Cook till the bottom of the omelette becomes slightly brown, slowly flip over and cook the other side for few secs. Done!
                                                

Slide the capsicum omelette  onto a plate.. serve hot with bread or steamed rice.. J

Egg Veg Poriyal



     Egg – veg  Poriyal:
Ingredients :
·        Egg – 2 boiled
·        Onion – 2 medium finely chopped
·        Garlic – 10 finely chopped
·        Carrot, potato , beans, peas – 1 cup (finely chopped)
·        Red chilli powder – 1 spn
·        Salt as needed

For seasoning :
·        Oil – 2 spn
·        Cinnamon – 1 bit
·        Star anise – 1

To make masala:
·        Grated coconut – ½ cup
·        Pepper – 1 spn
·        Sombu – ¼ spn

Preparation :
·        Wash ,peel and finely chopped the veggies.
·        Boil the egg with little salt and allow it to cool. Cut it into small pieces.
·        Grind coconut along with other ingredients  with little water and make a fine paste.
·        Cook the veggies separately with little salt and little water.
         
Method :
·        Heat oil in a pan, add the seasoning one by one..
·        Then add onion ,garlic and sauté well in the oil for 5 mins.
·        Then add coconut paste , chilli powder and cook well till raw smell goes off. Add required salt and  little water.
·        Atlast add the egg pieces. Mix well.
·        Cover and cook  for few mins  till all the ingredients combined altogether.

                                                  

Egg Veg  poriyal is ready.. serve hot with any rice of  your choice J
