Okra / Ladies Finger Raita


  Okra / Ladies finger Raita :

Ingredients :
·        Tender Ladies finger –150 gms
·        Green chilli – 1 chopped
·        Salt as needed
·        Yogurt – ½ cup

For seasoning :
·        Oil – ½ spn
·        Mustard seeds – ½ spn
·        Urad dal – ½ spn
·        Curry leaves - few

Preparation :
·        Wash and dry the ladies finger. Discard the crown and tip part ,then cut the middle portion into thin slices.

Method :
·        Heat oil in a pan, shallow fry the okra pieces along with green chili till they turns brown and crisp.
·        Let it allow to cool.
·        Then add yogurt and enough salt to the fried okra.
·        To make seasoning: heat oil in a pan, add the seasoning one by one.let the contents cool down.
·        Then transfer it to the raita.. mix well.  Done!
                              

Okra raita is ready.. serve with rice.. :J

Crunchy Cucumber-Carrot Raita



      Crunchy cucumber – carrot Raita


      Cucumber is the right vegetable to beat scorching summer heat ,right J.
crunchy cucumber raita is an excellent cooling dish. I have tried cucumber with carrot to make more healthy. I am sure you will  definitely enjoy this,..

Ingredients :
·        Cucumber – 1 small finely chopped
·        Carrot  - ½ finely chopped
·        Onion – ½  finely chopped
·        Fresh yogurt – 1 cup
·        Salt as needed
·        Green chilli – 1 small finely chopped
·        Coriander leaves finely chopped

To temper :
·        Oil – ½ spoon
·        Mustard seeds -1/2 spoon
·        Urad dall – ½ spoon

Method :
·        Wash , clean and chopped  the vegetables.
·        Beat the yogurt in a bowl.
·        Add the chopped vegetables ,salt and green chilli.
·        Heat oil in a pan.once the oil is heat add the tempering items.
·        Let the contents cool down.
·        Then transfer the contents to raita and mix well
·        Garnish with coriander leaves.

Raddish Carrot Raita

       


     

Raddish Carrot Raita







Preparation Time : 10 mins
Cooking Time: 5 mins
Serves : 2

Ingredients:
·        White Raddish – ½  grated
·        Carrot  - ½ piece grated
·        Onion – ½ piece ( finely chopped)
·        Fresh yogurt - 1cup (curd )
·        Green chilli  - 1
·        Salt as needed
·        Fresh coriander leaves chopped

For the seasoning:
              Oil – 1 tb spn
              Mustard – ½ spoon
              Urad dall – ½ spoon
Method :
·        Wash, clean and grated the  radish and carrot.
·        Beat the yoghurt in a bowl.
·        Add the chopped onion and grated radish  and carrot pieces.
·        Add salt and chopped coriander leaves.
·        Cut the green chilli in long pieces.
·        Heat oil in a pan.
·        Once the oil is heat, add mustard, urad dall and allow to crackle.
·        Add green chilli and take the pan off from heat.
·        Let the contents cool down.
·        Then transfer the contents to raita and mix well.
·        Garnish with freshly chopped coriander leaves.

Cabbage Carrot Raita

          Raita have always been a part of any traditional Indian meal.Now learn how to make cabbage carrot raita.

Preparation time: 5 minutes
Cooking time: 2 minutes
Servings: 2
Ingredients:
·         Cabbage – a small grated (rinsed and chopped)
·        Carrot  - ½ piece grated
·        Onion – ½ piece ( finely chopped)
·         Fresh yogurt - 1cup (curd )
·         Ginger  - 1 inch chopped
·         Green chilli  - 1 small halved and remove seeds
·         Salt as needed
·        Sugar – ½  spoon
·        Fresh coriander leaves chopped

For the seasoning:
  •    Oil - 1 tbsp
  •     Mustard – ½ spoon
  •   Urad dal – ½ spoon

Method :
·        Wash the cabbage leaves and chop them finely.
·        Saute in a non-stick pan without adding oil.
·        You just need to dry the cabbage little bit.
·        Mix all the above ingredients with the yogurt.
Yummy and healthy Cabbage carrot raita is ready to serve..... :)
