Rava / Sooji / Semolina Halwa



   

Rava / semolina / Sooji  Halwa:

Ingredients :
·        Rava  – 1  cup
·        Water( hot ) – 2 cup
·        Milk(hot ) – ½ cup
·        Sugar – ¼ to ½  cup
·        Ghee – 5  to 8 spn
·        Cashew – 10 ( cut into small pieces)
·        Almonds – 5 sliced
·        Raisins – 5
·        Cardamom powder – a pinch

Preparation :
·        Dry roast the rava / sooji  till raw smell goes off.

Method :
·        In a heavy bottomed pan, add the sugar, water , milk and cardamom powder.
·        Allow it to boil and dissolve the sugar in water. When its starts  to boil add cashews, sliced almonds, raisins , and rava.
·        Stir it continuously making sure no lumps are formed.
·        Add ghee and stir well till you get a halwa consistency. Cook till it thick and begins to comes from the sides of the pan like a halwa. Done !
                                         




Sooji  Halwa is ready.. serve to the nears and dears J

Oats Halwa



   Oats  Halwa:

Ingredients :
·        Oats – 1 cup
·        Water –  ½ cup
·        Milk – ½ cup
·        Sugar – ½  cup
·        Ghee – 4  spn
·        Cashew – 10
·        Almonds – 4 sliced
·        Raisins – 5
·        Cardamom powder – a pinch

Preparation :
·        Powder the oats in mixie. Then heat a spn of  ghee in a pan  and roast  the oats  flour till slight change in colour.
·        Then heat  ghee in a pan and roast the cashews and raisins . keep it aside.

Method :
·        In a heavy bottomed pan, add the  milk and water.
·        Allow it to boil and dissolve the sugar in water. When its starts  to boil add  cashews, sliced almonds, raisins , cardamom powder and oats flour.
·        Stir it continuously making sure no lumps are formed.
·        Add ghee and stir well till you get a halwa consistency( that is , it leaves from the sides of the pan ). Done !

Thiruvathirai Kali



   Thiruvathirai Kali :

Ingredients :
·        Raw rice – 1 cup
·        Jaggery – 1 ½ cup
·        Water – 2 ½ cup(including jaggery syrup)
·        Grated coconut – ¾ cup (fresh)
·        Ghee – 2 spn
·        Cashew – 5 quatered
·        Raisins – 7
·        Cardamom powder – a pinch

Preparation :
·        Dry roast the raw rice in a pan till it turns golden brown colour. Dry grind the rice coarsely (like rava)
·        Dissolve the jaggery in ¼ cup of water, melt it and filter it to remove impurities.
·        Heat ghee in a pan, roast the cashews till they golden brown and raisins till they puff up.

Method :
·        Heat little ghee in a pan, add jaggery syrup plus water ( totally 2 ½ cup) and bring it to boil.
·        Add grated coconut, cardamom powder and let it cook for few mins.
·        Then add the grinded rice ,and stir well continuously till you get the thick consistency.
·        Atlast add the roasted cashews and raisins , mix well. Done !
                                     

Thiruvathirai Kali is ready..  serve hot or cold J

Yummy Akkaravadisal




   Akkaravadisal :


Ingredients :
·        Raw Rice – ¾   cup
·        Moong dal – ¼ cup
·        Milk – 4 cup(boiled)
·        Powdered Jaggery – 1 ¼ cup
·        Cardamom powder – 1 pinch
·        Cashew – 6 quatered
·        Raisins – 5
·        Salt a pinch
·        Ghee –  7  tp 10 spn


Preparation :

·       Heat  a spn of ghee in a pan and roast the cashews till they turn golden brown and raisins till they puff up.
·        Clean and wash the rice.
·        Dry roast the moong dal until aroma comes.
·        Dissolve the jaggery with little water. Melt it and filter to remove impurities.

Method :
·        In a pressure cooker, add 3 spns of  ghee at the bottom and spreads it well.
·        Next add the warm milk , rice ,moong dal and mix well.
·    Put a spoon or small vessel inside to prevent the milk  from boiling over or spilling .
·        Cover the lid of the cooker.
·        Pressure cook it for 4 whistles. Switch off the flame.
·  Once the pressure released,add diluted jaggery syrup, balance ghee,  cardamom powder , roasted cashews and raisins to the cooked mixture . Done !  
                       



Akkaravadisal   is ready.. serve hot to ur dear and near .. J

     Wheat flour Halwa:

Ingredients :
·        Wheat flour – ½  cup
·        Water – 1 ½ cup
·        Sugar – ¾ cup
·        Ghee – 5 spn
·        Cashew – 10 ( grind it coarsely)
·        Almonds – 4 sliced
·        Raisins – 5
·        Cardamom powder – a pinch

Preparation :
·        Dry roast the wheat flour till raw smell goes off.

Method :
·        In a heavy bottomed pan, add the sugar in 1 ½ cups of water.
·        Allow it to boil and dissolve the sugar in water. When its starts  to boil add coarse cashews, sliced almonds, raisins , cardamom powder and wheat flour.
·        Stir it continuously making sure no lumps are formed.
·        Add ghee and stir well till you get a halwa consistency. Done !
