Delicious Idiyappam Kurma using Pressure Cooker



   Delicious kurma for Idiyappam using Pressure cooker  :
                                               
Ingredients :

·        Onion – 1 big chopped
·        Tomato – 1 chopped
·        Carrot , beans, potato , peas – 2 cups
·        Ginger garlic paste – 2 spn
·        Fresh curd – ¼ cup
·        Chilli powder – 1 spn
·        Coriander powder – 2 spn
·        Garam masala – ½ spn
·        Sambar powder – 1 spn
·        Coconut milk – ¼ cup
·        Salt as needed
·        Coriander leaves for garnish

To  make a paste:
·        Grated coconut – 3 spn
·        Kasa kasa – ½ spn
·        Cashews - 8
·        Onion – ¼ piece

For seasoning:
·        Oil / ghee  – 3 spn
·        Cinnamon – 2 bits
·        Cardamom – 1
·        Cloves – 2
·        Bay leaf – 1

Preparation :
·        Peel , wash and cut the veggies into small pieces.
·        Grind grated coconut with other ingredients in a blender with little water and make a fine paste.


Method :
·        Heat oil/ ghee  in a pressure cooker , add the seasoning one after the another.
·        Then add chopped onions and saute till they turn golden colour.
·        Then add the chopped tomatoes and sauté well till they turn mushy.
·        Next add ginger garlic paste and saute for 5 secs.
·        Then add all the veggies , spicy powders, salt, curd , coconut milk .
·        Allow it to boil .
·        Then add the coconut cashew paste and mix well . check the salt. If required add water.
·         Close the cooker with lid. Cook it for 3 whistles. switch off the flame.
·        After the pressure subsides open the lid and Garnish with coriander leaves. Done!
                                                   
Yummy Idiyappam kurma   is ready .serve hot with  idiyappam or chapathy or roti J
