Carrot Rice




       Carrot Rice:
         

Ingredients :
·        Cooked Rice – 1 cup
·        Grated carrot – ¾ cup
·        Onion – 1 big finely chopped
·        Salt as needed

To make masala powder:
·        Raw peanuts – 1 spn
·        Dry red chilli – 4
·        Coriander seeds – 1 ½ spn
      grated coconut  - 2 spn


For seasoning:
·        Oil – 2 spn
·        Mustard seeds – ½ spn
·        Peanut – 2 spn
·        urad dal – 1 spn
·        Green chilli - 3 (optional) i used
·        Curry leaves - few


Preparation :
·        Pressure cook the rice with little salt and spread it on a plate to cool.
·        First ,heat the pan and add the channa dal , red chilli , coriander powder and  peanuts. Roast it for a few mins. Then roast the coconut also.Then transfer it to the mixie and grind it to a coarse powder. Now the masala powder is ready.
·        Second , For seasoning ,heat oil in a pan, add the mustard seeds when it splutters, add urad dal , peanut and sauté till they turn golden brown.
·        Then add curry leaves ,sauté for few secs.
·        Next add chopped onions and sauté till they turn pink.
·        Then add grated coconut and sauté for few mins..
·        Then mix well the cooked  cool rice, seasoning and masala powder. Toss well everything.Done !
·        If it dry  add few dropes of gingelly oil or sesame oil.

                                     
    



Healthy Carrot  rice is ready.. . J
