Sweet Karamani Kozhukkatai :
To prepare puranam / stuffing :
Ingredients :

Karamani – ½ cup
·
Grated jaggery – 4 spn
·
Grated coconut - 3
to 5 spn
·
Salt as needed
·
Oil – 2 spn
·
Red chilli – 1 or 2 chopped
Preparation :
·
Dry roast the karamani till get a nice
aroma. Then Pressure cook it with little salt and water till it softens
·
Once the pressure releases, drain the
water completely.
Method :
·
Heat oil in a pan then add red chilli pieces and fry it becomes golden
brown..
·
Then add the cooked karamani
and mix well.
·
Next add the grated jaggery and mix
well till the jaggery melts and mix with the sundal.
·
Atlast add the grated coconut and toss well.
·
Simmer it for 3 – 5 mins and switch
off the flame..
·
Close the pan and let set in the kadai for 30 mins
·
Karamani stuffing is ready.
To prepare outer cover for kozhukattai :
Ingredients :
·
Idiyappam flour – 1 cup(ready
made flour from shop)
·
Water – 1 ¼ cup
·
Salt – a pinch
·
Oil
Method :
·
Take rice flour in a
bowl.
·
Allow it to boil 1 ¼ cup
of water in a pan by pinch of salt and a spn of oil.
·
Bring it to rolling
boil.
·
Then pour this boiling water to the rice flour and mix
it with the back of the ladle.
·
When it is warm, grease
your hands with oil and knead it to a smooth dough.
·
Covered it with a damp
cloth to prevent it from drying.
·
Divide the dough into
small equal sized ball.
To prepare kozhukattai :
·
Grease your hands with
oil, place a ball of dough on your palm and flatten it into a small circle and
keep 1 big spn of puranam / stuffing in the middle and seal the flour with your
fingertips and make it a madak or kozhkattai or any shapes u desired.
·
Repeat the same for the
rest of the dough and the stuffing.
·
Steam it in a idly
cooker or steamer , spaced properly for 5 to 7 mins. Done . switch off the
flame.
·
Let the kolukkatai rest
for 5 mins. Then remove it and enjoy the taste.
Sweet karamani kozhukattai is ready.. serve hot J
