Peanut Rice / Verkadalai Satham



     Peanut Rice / Verkadalai Satham:
         

Ingredients :
·        Cooked Rice – 1 cup
·        Salt as needed

To make peanut podi :
·        Raw peanuts – ½ cup
·        Dry red chilli – 4
      coriander seeds - 1  to 2 spn
·        Channa dal / kadalai paruppu – 3
·        Curry leaves - few


For seasoning:
·        Oil – 2 spn
·        Mustard seeds – ½ spn
·        Peanut – 2 spn
·        urad dal – 1 spn
·        Grated coconut – 3 spn
·        Curry leaves - few


Preparation :
·        Pressure cook the rice with little salt and spread it on a plate to cool.
·        First ,heat the pan and add the channa dal ,coriander seeds, red chilli and curry leaves. Roast it for a few mins. The transfer it to the mixie and grind it to a coarse powder.
·        In the same pan, dry roast the peanuts for 5 to 7 mins till raw smell goes off and pulse it in a mixie for few secs. Now the peanut podi is ready.
·        Second , For seasoning ,heat oil in a pan, add the mustard seeds when it splutters, add urad dal , peanut and sauté till they turn golden brown.
·        Then add grated coconut and curry leaves ,sauté for few secs.
·        Then mix well the cooked  cool rice, seasoning and peanut podi. Toss well everything.Done !
·        If it spicy add few dropes of gingelly oil or sesame oil.

                                          


Delicious Peanut rice is ready.. . J
