Peanut Sundal / Verkadalai Sundal



   Peanut Sundal  /  Verkadalai sundal :


Ingredients :
·        Raw peanuts – 1 cup
·        Onion – ¼ cup finely chopped (optional)
·        Grated coconut  - 3 to 5 spn

For seasoning :
·        Oil – 2 spn
·        Mustard seeds – 1 spn
·        Urad dal – 1 spn
·        Curry leaves – few
·        Red chilli – 4 chopped

Preparation :
·        Pressure cook the peanuts  with little salt till it softens.
         
Method :
·        Heat oil in a pan, add mustard seeds and let them crackle.
·        Then add urad dal , red chilli pieces and fry it becomes golden brown.
·        Then add curry leaves and sauté to turn crispy.
·        If used, add onion and sauté till they turn pink colour.
·        Then add the cooked peanut  and mix well.
·        Atlast add the grated coconut  and toss well.
·        Simmer it for 3 – 5 mins and switch off the flame..
                                         
Peanut  sundal  is ready.. J
