Cow peas / Karamani Sweet sundal



  Cow Peas / Karamani sweet sundal :
Ingredients :
·        Karamani – ½ cup
·        Grated jaggery – 4 spn
·        Grated coconut  - 3 to 5 spn
·        Salt as needed

For seasoning :
·        Oil – 2 spn
·        Mustard seeds – 1 spn
·        Urad dal – 1 spn
·        Curry leaves – few
·        Red chilli – 4 chopped

Preparation :
·        Dry roast the karamani till get a nice aroma. Then Pressure cook it with little salt and water  till it softens
·        Once the pressure releases, drain the water completely.
         
Method :
·        Heat oil in a pan, add mustard seeds and let them crackle.
·        Then add urad dal , red chilli pieces and fry it becomes golden brown.
·        Then add curry leaves and sauté to turn crispy..
·        Then add the cooked  karamani  and mix well.
·        Next add the grated jaggery and mix well till the jaggery melts and mix with the sundal.
·        Atlast add the grated coconut  and toss well.
·        Simmer it for 3 – 5 mins and switch off the flame..
·        Close the pan and let set the sundal in the kadai for 30 mins.
                                             

Sweet  karamani  sundal  is ready.. J
