Egg -Soya chunks Kurma for Chapathy




      Egg – soya chunks  kurma For Chapathy  :
         
Ingredients :
·        Egg – 2(boil)
·        Soya chunks – 1 ½  cup
·        Onion – 2 medium chopped
·        Tomato – 1 chopped
·        Red chilli powder –2  spn
·        Coriander powder – 4 spn
·        Garam masala – ½ spn
·        Salt as needed
·        Coriander leaves for garnish

To  make a paste:
·        Onion – ½ piece
·        Ginger – 1 inch
·        Garlic – 3 sliced
·        Sombu – ½ spn
·        Cashew – 3
·        Pepper – ¼ spn
·        Kasa kasa – ½ spn
·        Grated coconut – ½  cup

For seasoning:
·        Oil – 1 spn
·        Cinnamon – 2 bits
·        Star anise – 1
·        Bay leaf – 1



Preparation :
·        Boil the eggs by adding little salt and remove the shell. Cut the eggs into halves.
·        Heat water in a vessel or pan. Bring it to a good rolling boil. Add  the soya chunks and switch off the flame.
·        Don’t disturb it for 15 mins after that drain it in a colander and wash it with lots of cold water to remove the smell.
·        Grind coconut with other ingredients in a blender with little water and make a fine paste.


Method :
·        Heat oil in a pan, add mustard seeds and allow it to crackle..
·        Then add the seasoning items one after the another.
·        Then add chopped onions and sauté till they turn pink.
·        Then add tomatoes and sauté well till turn mushy.
·        Next add chilli powder, coriander powder,garam masala, coconut paste,salt along with enough water.
·        Cover and cook it for 5 mins.
·        Then add soya chunks , cover and cook it for 15 mins.
·        Atlaat add the egg pieces  and cook till the kurma thickens.
·         Garnish with coriander leaves. Done!
                           


Egg- soya chunks  kurma  is ready .serve hot with chapathy J
