Egg – veg Poriyal:
Ingredients :

Egg – 2 boiled
·
Onion – 2 medium finely chopped
·
Garlic – 10 finely chopped
·
Carrot, potato , beans, peas – 1 cup (finely chopped)
·
Red chilli powder – 1 spn
·
Salt as needed
For seasoning :
·
Oil – 2 spn
·
Cinnamon – 1 bit
·
Star anise – 1
To make masala:
·
Grated coconut – ½ cup
·
Pepper – 1 spn
·
Sombu – ¼ spn
Preparation :
·
Wash ,peel and finely chopped the veggies.
·
Boil the egg with little salt and
allow it to cool. Cut it into small pieces.
·
Grind coconut along with other ingredients with little water and make a fine paste.
·
Cook the veggies separately with
little salt and little water.
Method :
·
Heat oil in a pan, add the seasoning
one by one..
·
Then add onion ,garlic and sauté
well in the oil for 5 mins.
·
Then add coconut paste , chilli
powder and cook well till raw smell goes off. Add required salt and little water.
·
Atlast add the egg pieces. Mix well.
·
Cover and cook for few mins till all the ingredients combined altogether.
Egg Veg poriyal is ready.. serve hot with any rice
of your choice J
