Tomato Rice (Method II)




      Tomato   Rice: (Method II)
          It is also a  delicious rice.. Try it and enjoy J

Ingredients :
·        Cooked Rice – 1  cup
·        Onion – 2 big chopped lengthwise
·        Turmeric powder – ¼ spn
·        Sambar powder – 1 spn or (red chilli powder – 1 spn)
·        Salt as needed
·        Coriander leaves for garnish

To grind :
·        Garlic – 7 sliced
·        Ginger – 1 inch
·        Ripe juicy Tomatoes – 3 finely chopped(light fry in oil and grind all these)

For seasoning :
·        Ghee / oil  – 2 spn
·        Cinnamon – 2 bits
·        Star anise - 1
·        Curry leaves - few

Preparation :
·        Pressure cook the rice with little salt and spread it on a plate to cool.
·        Heat oil in a pan, light fry the tomatoes and grind in a blender along with garlic and ginger to a fine paste.

Method :
·        Heat  ghee in a pan, then add mustard seeds when it splutters add cinnamon and star anise and sauté well.
·        Then add curry leaves and sauté till turn crispy.
·        Then add chopped onion  and sauté well till they turns light brown.
·        Then add grinded tomato ginger-garlic paste and sauté well till raw smell goes off.
·        Next add spicy powders, turmeric powder and salt.
·        Stir continuously without getting burnt at the bottom.
·        Stir continuously until get the thick consistency.
·        Transfer cool rice to the pan and mix well. Done !
Garnish with coriander leaves.
                      


Delicious Tomato  Rice is ready.. serve hot .. J
