Mysore Pak:
Ingredients :

Gram flour / besan flour / kadalai mavu – ½ cup
·
Sugar – 1 ¼ cup
·
Ghee – 1 cup
·
Water just to cover the sugar
·
Lemon yellow colour – a pinch
Method:
·
Measure and sieve the gram flour without any impurities and
lumps.
·
Dry roast or roast the gram flour with a tsp of ghee and
allow it to cool.
·
Again sieve the roasted gram flour for getting a lump
free Mysore pak.
·
Grease a plate or square pan with ghee and keep it aside.
Preparation :
·
In a heavy bottomed pan, add sugar and cover it with water.
·
Bring it to boil for 5 to 8 mins. It should form a string consistency.
·
Add lemon yellow colour to the syrup and mix well.
·
Now slowly add the roasted gram flour to the syrup.
·
Stir it continuously without any lumps, add the warm ghee
cup by cup .
·
Mix the mysore pak till the ghee is engulfed in it.
·
At one stage the mysore pak will gather like that of a
halwa.
·
That is it starts leaving the sides.
·
This is the right consistency , pour it in the greased pan
/ plate.
·
When it still warm. Slice it with a buttered knife.
·
Store it in an air tight container after it cools down
completely.
Milky Mysore Pak is
