Egg Rice:
Ingredients :

Cooked Rice – ½ cup
·
Egg - 2
·
Onion – 1 big finely
chopped
·
Green or red chilli
– 2
·
Pepper – ½ spn
·
Turmeric powder – ¼ spn
·
Red chilli powder – 1 spn(optional)
·
Salt as needed
·
Coriander leaves
for garnishing
For seasoning :
·
Ghee / oil – 2 spn
·
Mustard seeds – 1 spn
·
Urad dal – ½ spn
·
Channa dal – ½ sspn
·
Curry leaves - few
Preparation :
·
Pressure cook the rice with little sall and spread it on a plate to cool.
·
Beat the eggs in a bowl. Add little salt ,turmeric powder and pepper. Mix well.
Method :
·
Heat ghee in a pan, then add
mustard seeds when it splutters add urad dal and channa dal and sauté well till the turn golden brown.
·
Then add curry leaves and sauté till turn crispy.
·
Then add chopped onion,green chilli and sauté well .
·
Then add beaten eggs. When it starts to solidify , cut the eggs with ladle
and make a egg scramble.
·
Check the salt.
·
Stir continuously without getting burnt at the bottom.
·
Transfer cool rice to the pan and mix well. Garnish with coriander leaves Done !
Delicious Egg Rice is ready.. serve
