Eggplant Gosthu



    Eggplant Gosthu :
          Eggplant or Brinjal Gosthu is easy and tasty sidedish for Ven pongal ,Idly and Dosa.

Preparation time : 10 mins
Cooking time : 20 mins
Servings :3

Ingredients :
·        Moong dal (pasi paruppu)- ½ cup
·        Brinjal – 1 cut into small pieces
·        Onion – 2 cut lengthwise
·        Tomato – 1 finely chopped
·        Turmeric powder – ½ spn
·        Salt as needed
·        Tamarind juice – ½ cup
·        Sugar or jaggery – 1 spn
·        Curry leaves
·        Coriander leaves

For spice powder:
·        Cumin seeds – ½ spn
·        Red chili – 4
·        Coriander seeds- 1 spn
·        Urad dal – 1 spn
·        Channa dal – 1 spn

For tempering:
·        Mustard seeds- ½ spn
·        Cumin seedsm- ½ spn
·        Red chili – 2 chopped

Preparation :
·        Pressure cook the moong dal with small pieces of carrot or potato for 3 whistles.keep it aside
·        Dry roast the ingredients for the spice powder,cool and grind into a fine powder.keep it aside.

Method :
·        Heat  oil in a pan and add the mustard seeds cumin seeds and red chili. The add chopped onion and curry leaves.. Fry until the onions turn soft (about 3 mins) and add the chopped brinjal and tomatoes. Fry again until the tomatoes turn soft .
·         Next, add the tamarind water and turmeric powder and bring to boil. Cook until the tomatoes and brinjal turn completely soft.
·         Add the cooked moong dal to this along with the powdered spices and bring to boil again. You can add about 2 tbsp of the spice powder, taste, and then add more if required. Add salt,jaggery/sugar and simmer until the right consistency is reached. It should be like a gravy. Turn off flame and garnish with the chopped coriander leaves..Done !
                                   
                                       



Serve hot with ven pongal or idly or dosa … J
