Pumpkin Fry




    Pumpkin fry :
           Pumpkin fry is easy to prepare and serve the purpose of the spicy-sweet sidedish.
                              

                                          
 Preparation time : 5 mins
Cooking time : 15 mins
Serves : 3

Ingredients :
·        Pumpkin – 150 gms
·        Onion – 1 chopped
·        Sambar powder or chilli powder – 1 1/2 spn
·        Salt as needed
·        Curry leaves few
·        Grated coconut – 2 spn (optional)

For tempering :
· Oil  - 2 to 3 spn
· Mustard seeds – ¼ spn

Preparation :
· Wash and remove the skin of the pumpkin.
· Cut the pumpkin into uniform sized  2 inch pieces.

Method :
· Heat oil in a pan.crackle the mustard seeds first.
· The add chopped onions and curry leaves and sauté for few seconds.
· Add the spice powder ,salt and quick  stir.Dont let the powder burn.stir it until raw smell goes off.
· Then add pumpkin pieces. Sprinkle little water for the spice powder to coat well with the pumpkin and give a quick stir.
·  Keep cooking  by cover with lid till it roast well.
· Keep on turnings  at intervals to ensure even roasting of the pumpkins.
· Switch off the flame..Done!
                              


Serve it as a sidedish with any rice of your choice. J My family members love to have this with hot rasam rice and curd rice ..Try it and enjoy the taste.. J
