Boiled Egg Vadai




     Boiled Egg Vadai:

 It  has been serve as a evening snack .Try it and enjoy the taste J

Ingredients :
·        Kadalai paruppu  / split channa dal– 1 cup
·        Boiled eggs – 2
·        Rice flour – 1 spn (optional)
·        Onion – ½ cup finely chopped
·        Red chilli – 2
·        Asafetida – a pinch
·        Sombu – ¼ spn
·        Curry leaves - few
·        Coriander leaves – 2 spn finely chopped
·        Salt as needed

Preparation :
·        Soak kadalai  parupu in water for 1 hour .
·        Then  drain the water completely and blend it in a grinder with red chilli, salt , asafetida and sombu to a coarse batter.
·        Boil the eggs with a pinch of salt. Discard the outer shell and cut the boiled eggs into small pieces.

Method :
·                Take the coarse batter in a bowl, add  egg pieces and onion,coriander ,curry leaves and mix well and make them into a vadai batter consistency(like paruppu vadai or masala vadai)
·                Rice flour gives crispyness to the vada so add just one spoon.
·                Take small portion from the batter and flatten it slightly and form a disc shape.
·                Heat oil in a pan, drop the discs gently and fry both sides until golden brown.
·                Place it on a paper towel to drain the excess oil.
·                Repeat the same process for the rest of the vadai batter. Done!
                                      



                                 
Yummy Egg vadai is ready.. serve hot with a cup of tea or coffee J

Creamy Rice Payasam With Coconut Milk in Pressure Cooker



  Creamy Rice Payasam  With Coconut Milk in  Pressure Cooker :


          It’s a very delicious payasam.. try and enjoy the taste J I have prepared it in pressure cooker to save time and fuel.

Ingredients :
·        Raw rice – ½  cup
·        Milk – 2  cup (boiled)
      sugar - 1/4 cup
·        Water – 1 cup
·        Salt a pinch
·        Cashews – 5 quatered
·        Cardamom powder - pinch
·        Raisins – 6
·        Ghee – 2 spn
·        Coconut milk – ¼ cup

Preparation :
·       Wash and soak rice in water for 30 mins, drain the water and  dry grind the rice in a blender.  Just broken the rice not powdered coarsely or finely.
·        Heat ghee in a pan, roast the cashewstill they turn golden brown and raisins till it puff up and keep it aside.

Method :
·        Heat a spn of ghee in a pressure cooker add water, warm milk and broken rice.
·        Cook it for 2 whistles.
·        When the pressure subsides, open the lid and add sugar and  cardamom powder , mix well and boil it for 2-3 mins.
·        At last add coconut milk  and switch off the flame before its starts to boil.
·        Decorate with roasted cashews and raisins. Done !
                                



Creamy Rice  payasam is ready.. J serve hot or cold to your dears and nears  J

Home Made Herbal Juice / Syrup / Khasayam For Common Cold, cough



    Home Made Herbal Juice / Syrup  / Khasayam for  Common Cold, Cough:

                           Khasayam is the term  used by south Indians to treat cold, cough, fever ,headache etc…It is easily prepared at home with some easily available herbs. Kashayam is prepared by boiling water with  some herbs and the liquid is boiled until it reduces to half  in its level.
                   This syrup is suitable for both kids and adults.

Ingredients :
·        Sitharathai / Thai Ginger – 1 inch (crushed)
·        Pepper – 1 spn (powder it)
·        Turmeric powder – ¼ spn
·        Raisins – 10 nos
·        Panangal kandu  as needed
·        Water – 1 cup

Method :
·        In a heavy bottomed vessel, add crushed sitharathai, powdered pepper, turmeric powder, raisins and panangal kandu with 1 cup of water.
·        Allow it to boil till the level of water reduced to half.
·        Filter it and drink twice a day with milk or without milk to treat cold and cough.
·        For adults :
Take ¼ to ½ cup of syrup and boil with ½ cup of milk for 3 to 4 mins. Add panangal kandu  and drink it warm twice a day.
·        For children :
Take 2 or 3 spns of syrup and boil with ½ cup of milk .Add panangal kandu and give it warm twice a day.
·        You can also increase the amount of panangal kandu and raisins in the khasayam. Its relieves quickly sore troat , common cold  and cough.
                                   


Note :
·        You can use this khasayam  for 3 days by adding water.

Vegetable Pakoda Kadi


   Vegetable Pakoda Kadi :


To prepare pakoda :

Ingredients:
·        Gram flour /kadalai mavu – ½ cup
·        Onion – ¼  cup chopped
·        Grated carrot , grated cabbage ,grated potato– ¼ cup
·        Chilli powder – ½ spn
·        Salt as needed
·        Oil for deep fry
·        Little water
In a bowl mix all the ingredients with little water and make them like a thick  pakoda batter. Divide the batter into equal small balls . Heat oil in a pan and fry them to a golden brown. keep it aside.

To prepare Kadi :

Ingredients :

·        Yogurt – 2 cup
·        Gram flour / kadalai mavu – 2 spn
·        Turmeric powder – ¼ spn
·        Salt as needed
·        Chilli and ginger paste – ¾ spn
·        Curry leaves few

For seasoning:
·        Oil – 2 spn
·        Mustard seeds – ½ spn
·        Cumin seeds – ½ spn
·        Asafetida – 1 pinch
·        Curry leaves - few

Method :
·        Heat oil in a pan, add the seasoning one by one.
·        Next add yogurt ,gram flour ,  chilli ginger paste, turmeric powder and  salt .
·        Cook it for 15 mins. If required add water.
·        Then add the  fried  veg pakodas  Cover and cook  it for 5  mins. Done!
·        Garnish with curry leaves.
                                 

Vegetable pakoda kadi  is ready.. serve hot with steamed rice .. J

Oats Vadai




      Oats Vadai:

 Oats vadai is a yummy and delicious vada. It has been serve as a evening snack .Try it and enjoy the taste J

Ingredients :
·        Kadalai paruppu – 1 cup
·        Oats – ¼ cup
·        Rice flour – 1 spn (optional)
·        Onion – ½ cup finely chopped
·        Red chilli – 2
·        Asafetida – a pinch
·        Sombu – ¼ spn
·        Curry leaves - few
·        Coriander leaves – 2 spn finely chopped
·        Salt as needed

Preparation :
·        Soak kadalai  parupu in water for 1 hour .
·        Then  drain the water completely and blend it in a grinder with red chilli, salt , asafetida and sombu to a coarse paste.
·        Dry roast the oats for few secs.

Method :
·                Take the coarse paste in a bowl, add   roasted oats and onion,chopped coriander leaves, curry leaves and mix well and make them into a vadai batter consistency(like paruppu vadai or masala vadai)
·                Rice flour gives crispyness to the vada so add just one spoon.
·                Take small portion from the batter and flatten it slightly and form a disc shape.

Wheat Flour Halwa



     Wheat flour Halwa:

Ingredients :
·        Wheat flour – ½  cup
·        Water – 1 ½ cup
·        Sugar – ¾ cup
·        Ghee – 5 spn
·        Cashew – 10 ( grind it coarsely)
·        Almonds – 4 sliced
·        Raisins – 5
·        Cardamom powder – a pinch

Preparation :
·        Dry roast the wheat flour till raw smell goes off.

Method :
·        In a heavy bottomed pan, add the sugar in 1 ½ cups of water.
·        Allow it to boil and dissolve the sugar in water. When its starts  to boil add coarse cashews, sliced almonds, raisins , cardamom powder and wheat flour.
·        Stir it continuously making sure no lumps are formed.
·        Add ghee and stir well till you get a halwa consistency. Done !
                             




Wheat flour Halwa is ready.. serve to the nears and dears J
