Red Kurma (mixed Veg) For Chapathy, Idly and Roti



  Red Kurma  (Mixed veg )For Chapathy , Idly and Roti :
         
Ingredients :
·        Onion – 2 finely chopped
·        Tomatoes – 2  finely chopped
·        Carrot ,beetroot, potato, peas, cabbage – 2 -3 cups(cut into small pieces)
·        Coconut milk  (thick)– ¼ cup
·        Coriander leaves for garnish
·        Salt as needed
·        Oil – 2 spn

To  make a paste:
·        Green chilli – 4
·        Red chilli – 4
·        Coriander seeds – 1 spn
·        Kasa kasa – 1 spn
·        Roasted gram /pottu kadalai – 2 spn
·        Cashews – 8 nos
·        Grated coconut – ¼ cup

Preparation :
·        Pressure Cook the veggies with little salt for 1 whistle.
·        Grind green chilli along with other ingredients in a blender with little water and make a fine paste.


Method :
·        Heat oil in a pan, add finely chopped onions and sauté well til they turn brown colour.
·        Then add the chopped tomatoes and sauté well till they turn mushy.
·        Next add the grounded paste, saute well and cook it for 5 mins.
·        Then add the half cooked veggies ,salt  with enough water. Cover and cook it for 15 mins.
·        Atlast add coconut milk and simmer it  for few mins..
                             


 Garnish with coriander leaves. Done!
Red Kurma  is ready .serve hot with chapathy J
