Thandu Keerai poriyal /Amaranthus leaves poriyal



    Thandu keerai / Amaranthus leaves Poriyal:

Ingredients :
·        Spinach / thandu keerai – 2 cups
·        Onion – 1 finely chopped
·        Garlic – 5 finely chopped
·        Red chilli – 2 chopped
·        Salt as needed
·        Grated coconut – ¼ cup

For seasoning :
·        Oil – 2 spn
·        Mustard seeds – ½ spn
·        Urad dal – ½ spn

Preparation :
·        Wash and clean the greens well. Chop them finely.
         
Method :
·        Heat oil in a pan, add mustard seeds and let them crackle.
·        Then add urad dal and fry it becomes golden brown.
·        Then add onion and sauté well in the oil for 5 mins.
·        Then add garlic and red chilli and sauté well.
·        Next add chopped greens and mix well .
·        Cover and cook it till all the ingredients combined  together.
·        Stir well and sprinkle little water if required.
·        Atlast add the grated coconut and stir well..
·        Simmer it for 5 mins and off the flame. Done !
                          


Thandu Keerai poriyal  is ready.. serve hot with any rice of  your choice J
