Channa Baingan / Aubergine - Chick Peas Kurma For Chapathy and Rice



      Channa Baingan / Aubergine – chick peas kurma For Chapathy and Rice:


Ingredients :
·        White Chick peas –  ½  cup
·        Aubergine / violet colour brinjal – 3 (cut lengthwise)
·        Onion – 2 medium (cut lengthwise)
·        Tomato paste – ½ cup
·        Green chilli – 3 chopped
·        Garlic – 6 sliced
·        Turmeric powder – ¼ spn
·        Garam masala – ½ spn
·        Sambar powder – 1½  spn
·        Salt as needed
·        Coriander leaves for garnish

To  make a paste:
·        Grated coconut – ½ cup
·        Onion – ½ piece
·        Cashew – 2


For seasoning:
·        Oil – 3 spn
·        Curry leaves


Preparation :
·        Soak the chick peas in water for 12 hours and pressure cook with little salt till becomes soft.
·        Grind coconut, onion, cashew  in a blender with little water and make a fine paste.

Method :
·        Heat oil in a pan, ad curry leaves till it crisp.
·        Then add the cut onions , garlic and sauté till turn golden brown.
·        Then add the green chilli ,coconut paste ,tomato paste and  saue till raw smell goes off.
·        Then add brinjal, salt, turmeric powder,  cook till brinjals becomes soft( 5 - 7 mins.
·        Then add the cooked chick peas,sambar powder and enough water. check the salt.
·    Cover and cook it for till the kurma thickens  and garnish with coriander leaves. Done!
                        

Channa Baingan is ready .serve hot with chapathy.. J
