Pumpkin Kurma for Chapathy



      Pumpkin  kurma For Chapathy :
         
Ingredients :
·        Pumpkin – 1 cup (cubed)
·        Potato – 2 medium
·        Carrot – 1 big
·        Cauliflower florets – 1 cup(optional)
·        Onion – 2 big finely  chopped
·        Red chilli powder – 1 spn
·        Salt as needed
·        Jaggery – 1 spn (optional)
·        Coriander leaves for garnish

To  make a paste:
·        Green chilli – 3
·        Grated PUMPKIN – ¼ cup
·        Tomato – 1
·        Grated coconut – ½  cup
·        Garlic  - 3 sliced
·        Dry red chilli – 4
·        Coriander seeds – 1 spn
·        Turmeric powder – ¼ spn

For seasoning:
·        Oil – 2  spn
·        Cinnamon – 2 bits
·        Bay leaf – 1
·        Star anise – 1


Preparation :
·        Wash , peel and cut  carrot and potato into small cubes. Pressure cook it with little salt for 1 whistle .
·     Grind grated pumpkin along with other ingredients in a blender with little water and make a fine paste.


Method :
·        Heat oil in a pan, add the seasoning one after the another.
·        Then add onions,and sauté till turn golden brown.
·    Then add the grounded pumpkin  paste,red chilli powder, salt with enough water. Cover and cook it for 10 mins.
·     Then add pumpkin cubes, cooked veggies, Cover and cook till kurma thickens(  10- 15 mins mins). Garnish with coriander leaves. Done!
                          


Pumpkin kurma  is ready .serve hot with chapathy. J
