Mixed Vegetable Curry For Chapathy :
This
curry also goes well with Idly and Dosa.
Ingredients :
·
Aubergine / brinjal – 2 medium (cut lengthwise)
·
Potato – 1 big (boil, peel and mash)
·
Beans – ½ cup chopped
·
Cabbage – ½ cup (cut lengthwise)
·
Peas – ½ cup
·
Onion – 2 medium (cut lengthwise)
·
Coconut milk – 4 to 5 spn
·
Salt as needed
·
Coriander leaves for garnish
To make a paste:
·
Green chilli – 6 to 8
·
Onion shallots – 12 to 15 nos
·
Pepper – ¼ spn
·
Fennel seeds – ¼ spn
·
Cumin seeds – ½ spn
·
Ginger – ½ inch
·
Garlic – 7
·
Khus khus powder – 1 spn
For seasoning:
·
Oil – 1 spn
·
Mustard seeds – ½ spn
·
Curry leaves
Preparation :
·
Cook Peas ,beans,cabbage with little
salt till becomes soft.
·
Grind green chilli along with other
ingredients in a blender with little water and make a fine paste.
·
Boil, peel and mash the potato.
Method :
·
Heat oil in a pan, add mustard seeds when
it splutters, then add curry leaves and saute till it crisp.
·
Then add the onions sauté till turn
golden brown.
·
Next add brinjal pieces and fry it for
few mins.
·
Then add the grounded paste and saute till raw smell goes off.
·
Then add the cooked vegetables, mashed
potato ,salt and enough water. check the salt.
·
Cover and cook it for till the curry
thickens and garnish with coriander
leaves. Done!
Vegetable Curry is ready .serve hot with chapathy or Idly or
Dosa.. J
