Ladies finger / Okra Mandi:
Ingredients:

Lady’s finger / okra – 250 g
·
Onion shallots – 10 chopped
·
Garlic – 7 sliced
·
Green chilli – 6 chopped
·
Tamarind paste – ¼ spn
·
Rice flour – 3 spn
·
Water – 2 cup
·
Salt as needed
For seasoning:
·
Oil – 2 spn
·
Mustard seeds – ½ spn
·
Urad dal – ½ spn
Preparation :
·
Wash and chop the ladies finger into small sized pieces.
·
Mix rice flour in ½ cup of water and make a fine paste
without any lumps.
·
Mix tamarind paste in ½ cup of water and extract the juice.
Method :
·
Heat oil in a pan, add the seasoning one by one.
·
Then add the chopped onion and sauté till they turn pink.
·
Then add the sliced garlic and chopped chillis and sauté
for few secs.
·
Then add the chopped okra and sauté for 5 mins.
·
Next add tamarind juice and salt and covered cook till raw smell goes off.
·
Then add the rice flour water and one cup of water and cook
till the mandi becomes little thickens. Done!
Okra mandi is ready..
serve hot with steamed rice .. J
