Egg Veg Chapathy Noodles



          Egg Veg Chapathy Noodles:

          This is a great receipe for leftover chapathis.

Ingredients :
·        Chapathy – 3 nos cut into long strips
·        Onion – 1 big cut lengthwise
·        Tomato – 1 finely chopped
·        Carrot ,cabbage ,capsicum – 1 cup julienned
·        Broccoli – 1 cup (optional)
·        Garlic flakes – 2
·        Egg – 2 beatened
·        Turmeric powder- ¼ spn
·        Chilli powder – ½ spn
·        Garam masala – ½ spn
·        Pepper powder – ½ spn
·        Salt as needed.
·        Lemon juice – 1 spn (optional)
·        Curry leaves few
·        Coriander leaves few
·        Oil – 3 spn

Preparation :
·        Heat oil in a pan ,cook the beatened egg as scrambled eggs.Keep it aside.
·        Wash and cut all the veggies into long strips.
·        Stack the chapathi and cut them first into four squares. Then cut them into long strips.

Method :
·        Heat oil in a pan, add onions and fry  till it  turns pink.
·        Add tomatoes cook till it turn mushy.
·        Next add all the veggies and garlic, cook till become soft.
·        Then add salt,turmeric powder and spicy powders.Mix well.
·        Sprinkle little water  to avoid getting burnt.
·        Stir it continuously till raw smell goes off.
·        Add cut up chapathy and mix well.
·        Now add the already prepared scrambled eggs to the chapathy noodles. Toss well everything.
·        Add coriander leaves to the noodles..Done !
                       


Serve hot with ketchup or with raita.
