Spaghetti with Amaranthus Leaves




  Spaghetti with Amaranthus leaves(Thandu keerai):

Ingredients :
·        Spaghetti  – 15 spieces cut into two halves (water – 4 to 5 cups)
·        Onion – 1 finely chopped
·        Amaranthus leaves (thandu keerai)- 1 cup
·        Pepper powder – 2 to 3 spn
·        Salt as needed
·        Oil –  1 + 1 spn
Preparation :
·        Wash and chopped the onion.
·        Clean, wash and take only the amaranthus leaves (thandu keerai).
·        Boil  4 to 5 cups of water in a pan , add salt and 1 spn of oil , add the halved spaghetti   and cook for 8 to 10  mins.
·        After the spaghetti  cooks, drain all the water.
·        Add some cold water, rinse and drain the cold water also. keep it aside.
Method :
·        Heat oil in a pan, add onions and sauté for few mins.
·        Then add thandu keerai and salt, sauté till the leaves becomes soft.
·        Add the cooked spaghetti and mix well to coat the leaves and onion all over the spaghetti.
·        Now add the pepper powder and toss well.
                              

Iron rich spaghetti  is ready.. serve hot J
