Yummy Yellow Pumpkin Halwa



       Yummy Yellow Pumpkin Halwa:

Pumpkin halwa or Kaddu Ka Halwa is a simple,delicious indian sweet made for special occasion.I have made this halwa by using pressure cooker. This saves lots of time and also fuel.

Ingredients :
·        Pumpkin cubes – 1 cup
·        Milk – ¾ cup
·        Sugar – ¼ cup
·        Ghee – 3 spn
·        Cashew – 5 quatered
·        Raisins – 5
·        Red/orange food colour – pinch (optional)
·        Cardamom powder – ½4 spn

Preparation :
·        Clean the pumpkin by removing the skin,seeds and also the husk covering the seeds. Cut them into small cubes.
·        Heat ghee in a pan and fry raisins till they puff up ,and fry cashew nuts till it turn golden brown. Keep aside.
·        Pressure cook the pumpkin cubes with milk for 1 whistle and allow it to cool.

 Method :
·        Grind the cooked pumpkin with milk to a smooth paste using food blender.
·        Heat ghee in a pan ,add ground pumpkin and cook till raw smell goes off.
·        Next add sugar and keep on stirring by adding ghee little by little into it till the excess liquid dries off and it becomes dry.
·        Atlast add roasted cashews,raisins and cardamom powder. Mix well.
·        Stir and cook till ghee starts  separates from halwa..Done!
                                   

Yummy Yellow pumpkin Halwa is ready..serve hot or chiiled .. J
