Beetroot Pulao

         


               

       Beetroot Pulao:
          It is a delicious and easy pulao made by using pressure cooker.

Ingredients :
·         Rice – 1 cup
·         Beetroot chopped – ½ cup
·         Peas  - ¼ cup (optional)
·         Onion – 1 finely chopped
·         Ginger garlic pate – 1 spn
·         Salt as needed
·         Garam masala – ½ spn
·         Turmeric powder – ¼ spn
·         Coriander leaves chopped – 1 spn
·         Water – 1 ½ cup
·         Lemon juice – ½ spn

To grind :
·         Small Onion – 4
·         Green chilli – 1

For seasoning :
·         Ghee /oil – 2 spn
·         Cinnamon – 2 bits
·         Cloves – 1
·         Cashew /raisins – 4 (optional)

Preparation :
·         Wash and soak the rice in 1 and ½ cups of water for 30 mins.
·         Wash,peel  and chop the vegetables.
·         In a blender, grind the onion and green chilli and make a fine paste.

Method :
·         In a pressure cooker, add oil then add the seasoning one by one.
·         Then add onion paste and ginger garlic paste and sauté till raw smell goes off.
·         Next add onion and sauté till it turns golden brown.
·         Add beetroot pieces and sauté well. Then add salt ,turmeric powder and garam masala sauté for 3 mins.
·         Next add the rice which we soaked. Don’t discard  the water. Sauté it in a low flame for 5 mins.
·         Then add the 1 and ½ cups of water and cover the lid of the cooker.
·         Pressure cook it for 2 whistles. Switch off the flame.
·         Once the pressure released, Fluff the rice with fork add lemon juice mix well.
Garnish with coriander leaves. Done!
                             

Beetroot pulao is ready..serve hot with onion Raita.. J
